    tips instead of muffins just mix self raise flour and water till you get a dough fry it up and there you go you have the perfect base for mini pizza far cheaper and delicious it dont need no salt no milk just water and self rising flour and fry it on a skillet they keep great in the freezer too

    Brooke ,I use crushed nacho chips , Taco meat ,Salsa and cheese Layer like Lasagna and Bake till Bubbly, I use a 9x9 baking dish.

    Have you ever tried making a big batch of scrambled eggs that you freeze? We did this once at church when we had a large donation of eggs. Thawed and mixed with some celery and mayo and made a delicious egg salad luncheon for seniors.

    Everything looks great. The tortilla burgers look so good. The chili so easy. I so look forward to your videos. This week ,after shopping I was depressed.     I read somewhere to mix an egg into your hamburger or any ground meat. It helps it from shrinking. True I don't know. But I will try it. I'm using 2 eggs for a lb.

    I’m Cajun and I make a lot of Jambalaya. I make mine from scratch, but even with the boxed one you can also add smoked sausage with or without chicken it’s delicious also if you like seafood shrimp jambalaya is great too. My Mom made a fantastic pork jambalaya also 😊

    If you have leftover oatmeal.. place it in a bread pan cover and place in the fridge overnight.. slice it up and fry in some butter and serve with syrup... its almost like having mush!! So very good and a great why to use leftovers in a new way.. my husband's granny made it alot to feed her large family

    Mrs Brooke I eat sweet potatoes the same way. Delicious! This whole week I have been re-inventing leftovers. 🙂 We had boneless skinless chicken breast on sale this week for $1.79 lb with digital coupon. The breast were so big that I will get 4 meals out of my $7.29 package. One breast feeds 3 adults. I am going back to get 1 more package. I only go in Kroger for digital coupons that are a REAL deal. I use Aldi and Dollar Tree as well. The $1.25 luncheon meat can feed all 3 of us for 1 meal. Thank you for all your amazing meal ideas and your honest frugal living.

    Great job. My chickens have been laying well too and I am trying to figure out ways to use them up too. When my big freezer got fixed and I put my meats back into it I found a partial bag of cooked chicken strips so I made a big batch of fried rice and I used a bunch of asparagus from my garden in it. I also used one cut up pork chop to make a stir fry. If possible I use recipes that incorporate meat into them instead of the star of the show so we can stretch it farther.

      brooke,you can freeze eggs.theres a few ways to do it! leoutube it.Its fab in the winter when the girls dont want to cooperate and they are on hiatus due to sunight issues.just a thought. ;)

    Love the sweet potatoes just the way you ate yours! If you haven’t tried white sweet potatoes, they rock eating them whole ans cooked like you did! My husband was raised eating white sweet potatoes dipped in chicken gravy! Yum! We all love them!

    I've recently realized I have more energy when I eat 1 egg (cooked different ways) & 2 slices bacon & 1-2 toasted carb. Hardy soup lunch & lighter healthy (mostly veggie) supper. Protein snack sometime daily.

    I just lurve when Kylen faints lol. He's adorable. All your children are lovely. Chilli dogs are my absolutely favourite meal. Hubby isn't keen but I just love it. I was brought up not eating a lot of meat, hasn't done us any harm. I was born in the fifties, we never had chicken for a meal, it was lean rump steak minced or rump steak as stew, mum always only bought 3/4lb, all she could afford but we had brilliant meals. Always homemade soup, dinner and a homemade pudding oh and also a glass of milk. She bulked out meals with veg and dumplings.       I don't eat a lot of meat either. Sometimes I just use a can of soup that has meat and mix that with a box of hamburger helper (instead of using hamburger. I have also made it with a can of drained beans instead of the meat or use any kind of ground meat instead of the burger.Or put the soup over rice or mashed potatoes with some veggies and maybe some melted cheese. My favorite soup is Campbell's Chunky. I like all the different flavors.

    Brooke use need to make fluff baked Omelet recipe 1cup of ham or bacon 10 lrg eggs 1 cup of coconut milk or half and half 1cup cheese of your choice 2tsp chives pinch of salt&pepper bake in greased 9x9 at 350 for30 minutes to use up your eggs mu family really loves it

    This is the old-fashioned Southern budget cooking I grew up on in the 1960s and still enjoy today. But it's crying out for some homegrown collard greens. Mass quantities of greens are that magical nutritional ingredient that is missing from most food budgets today. It's so important to our budget cooking that I now grow my greens, onions, herbs, and salad fixin's indoors. That might be something the kids would enjoy doing.

    As always thanks for more great ideas. I’m glad you mentioned the bouillon in the pantry because I needed a suggestion for my group for their $5 pantry item and that gave me ideas. Have you ever heard of migas or chilaquiles? They are Mexican dishes that are simple and a different way to use corn tortillas to stretch meat/protein and are a great way to use up eggs.

    Hint for eggs: crack into ice trays, freeze, then when solid store in ziplock freezer bag. Wham! During the season that you chickens aren’t laying as many you still have as many as you need.

    For my tortilla pizzas I use spaghetti sauce and a little bit of sugar and bacon bits and shredded cheese. 350 degrees for 13 minutes or till done.

    Oh Brooke first the eggs are coming out your butt and now they are coming out of your ears. We are making brisket fried rice tonight using up leftover brisket this is our third dinner from this brisket the gift that keeps on giving first night we had brisket with sides next night we had brisket grilled cheese with fries tonight will be brisket fried rice and tomorrow night will be leftover fried rice 4 dinners for 5 teens and adults from 2.5 pounds of brisket. Love your meals for this budget challenge. Chili cheese dogs are my favorite cheap meal. Well Brooke hope you have a great week. Brayden loves his mama's cooking so much.

    We make scrambles eggs and mix it with the chili beans all warmed in the same skillet and just to get extra full we make fresh handmand tortillas. Soooooooo delicious 😋

    We also make. Pizza quesadillas for lunch. We put our toppings and cheese inside flour tortillas and put them on the griddle or frying pan. Or the black stone and Brown each side until cheese melts and dip in pizza sauce. Quick easy and cheap lunch. It’s delicious and my 3 kiddos love it so does my fiancé

    You have some good ideas I had never thought of, and some I do use.
    That’s the bad part of using 73/27 HB meat. It shrinks almost 50%.

    Do you know who told us we need breakfast.....cereal companies ... Marketing. Intermittent fasting is the way! So many great health benefits. Ive always felt the way you just described about eating breakfast ...my stomach never wanted it but i did it qnyway bc i thought i was supposed to!! Now i eat from about 3 or 4 to 7 or 8. Water and black coffee during the day. Its awesome and i couldnt imagine eating all day again

    Just a suggestion, I use spices and make my own "taco spice" baggies. I just started and it's pretty easy.

    Hey Brooke i remember back in 1994 i use to spend 35 a week for 3 people that was 3 meals a day of course i used coupons back than. And packed my husbanss lunch. You did good with the prices now days.... Blessings

    I made 5he tortilla pizza cou0le days ago and couldnt find my jar of pizza sauce. So found a can of tomato sauce. Added a little italian seasoning i tiny pinch of garlic powder it was great! I pulled apart 2 mossarezlla cheese sticks, added pepperoni and black olives yum! 😋

    You are a master planner. This was very inspirational. I appreciate the side note on how you shuffled some meals for the family members with strong taste preferences. I walked away with the idea of making Tortilla “burgers” tonight. I have the ingredients and this will be a great alternative to another taco night!
