Something missing from this video (perhaps an idea for a follow-up) is forging strategy. Say you want to enchant an important dps weapon with maximum success bonuses. Don't waste a bunch of weapon mats rerolling over and over from scratch. I do random armor and accessory enchanting until my maximum success rate is approaching 20%, and then I switch to the weapon I'm focused on. That leaves me with a bunch of other gear with at least some level of enchantments, which is really important for those with more limited access to the mats (e.g. newer players who can't farm tower coins as efficiently)
In terms of the accessories themselves, because of the limited amount of enhancement materials, would it be best to enhance only Poison Resist accessories with HP (or poison), or is it better to enhance some Stun and Bind accessories with HP as well?
It's a toss up, since for the poison stuff, if you are trying to max the chance to dodge it, you wanna go max dodge. But if you want just everyday stuff, it's better to have HP enchants.

you cant go wrong with ATT DEF & HP on dps units

What about the enchanting of weapons for big three unit?
A lot of the time the units they are support slots for arnt the DPS units, so it's probably best to do their Def and hp first.
