- This mushroom rice with fresh spinach is a delicious, healthy meal for two people. With spicy soy sauce and aromatic mushrooms, this one-pot dish becomes the perfect feel-good dish in just 35 minutes!

Ingredients for 2 servings:
200 g mushrooms, sliced
1 handful of fresh spinach (approx. 100 g)
1 clove of garlic (approx. 5 g), finely chopped
150 g wholegrain rice
500 ml vegetable stock
1 tbsp soy sauce (15 ml)
1 tbsp vegetable oil (10 ml)
Salt and pepper

Preparation:
1. Heat vegetable oil in a pan.
2. Fry the garlic and mushrooms in it until they are lightly browned.
3. Add the rice and fry briefly.
4. Pour in the vegetable stock and soy sauce, mix everything well and bring to the boil.
5. Cover the pot with a lid and simmer on a low heat for 25 minutes until the rice is cooked.
6. Fold in the spinach and cook for 2 minutes until it collapses.
7. Season with salt and pepper and serve.
