If you get a pawn with body mastery and turn them into a ghoul. You have a super op creature. Never needing to eat so they can have all the augments and whatever else since they don’t need any food at all.

having the ghouls wear one of those backpacks that release the shambler gas would be kinda cool... refeuling them would be an issue though... (edit) or even a mod that let's you upgrade the ghouls so that they release the shambler gass as blood...
If you do wanna try a series. You could try a more cult focused series. perhaps one that uses ghouls as its source of defenses. treating them as respected beasts of burden
Maybe an option (or a mod) to make the ghouls feed themselves would be a good addition. A progress bar + a slider, like sanguophages with blood, or psycasters with meditation.

Wheel any spare ghouls between the tied down melee or outflank them (maybe with skipcasters) to throw them into disarray, even drawing fire away from the main brawl for a time would be great as Imperial hammerers have shields so friendly fire doesn’t really affect them but the crossfire amidst ranged… The brawling ghouls could get a reprieve from being peppered with shots to mop up the melee, hopefully before or around all the time the distraction flankers/teleported ghouls fall and the tide could fall upon the ranged enemies

Folkloric ghouls have very little to do with zombies. What you're referring to is the same pop-cultural archetype the game drew inspiration from to begin with. Ghouls in actual folklore aren't even undead, they're just man-eating shapeshifters with hooves that their shapeshifting can't disguise.
One thing you could do to make it more manageable is utilizing a lot of cryptosleep caskets to store them when they're not needed. I have a Ghoul Warcasket thanks to a set of mods allowing ghouls to be more generally functional and I keep him in cryptosleep most of the time. I always liked the idea of having ghouls for other purposes besides combat as well, serving specific functions almost like the mechanoids but with different requirements to maintain them.
I suppose if feeding the ghoul army is the main problem, there might be some kind of overpowered animal you could raise for a constant supply of meat. I know in one of my first Anomaly playthroughs I gave myself some chickens at the start and it was pretty convenient to just have one pawn auto-killing and butchering chickens to keep in a fridge that my starting ghoul could snack on as needed. So ranching animals to produce meat could be interesting for a long-term game. Or, maybe a Winston Waves playthrough? That way you can basically have raids show up to you on demand. So long as it doesn't send mechanoid raids.
Instead of a ghoul army you could do a series like Michonne from the walking dead. With 1-2 pawns and their squad of ghouls wandering from settlement to settlement.

HOW TO MAKE OP GHOULS Give them a basic xenogerm like ugly and unhappy to make they eat less, but even better give them a nuclear stomach, since ghouls are immune to cancer the nuclear stomach is a free upgrade also, give them at least 2 bionics legs if you are going to give them the ghouls enhancements Each ghoul will have 12% of their normal food consumption. Another thing do make ghouls easier to deal with, have a heart mass in your base, spawn with 1 or more, by my crude math each can keep like 3 ghouls feed, if you spawn 2 and have 12% food need you can keep 50 ghouls forever as long as someone keep shaving of the flesh the grotesque pulsating heart. Also even if they eat less ghouls have large stomachs so they need to eat alot to fill their need, them the bar goes down slowly.
this would have been better, but way longer, if you actually built the army. so what happens once the ghoul attacks you from hunger? if it get enough food does it become your pet again? i'd like to see a video showing how powerful you can make a ghoul.

Fun fact if you have a Hasar give them venom fangs, make him a vampire, THEN make him a ghoul, BY GOD have you got a Unkillable beast of death
if you make a hussar into a sanguo he will lose all hussar traits..

Yes. I had a creepy wanderer join with 4 charges of death refusal and good melee. He was causing trouble so I made him a Ghoul. Still has the charges.

They can't wear equipment without mods it's why the clothes falls off of them on transformation

You can make this a series first just start up with a pawn and a few ghould then expand the ghoul ar,y by converting o5er prisoners
If you have like, 4 flesh heart nuclei you could probably do this again. They make a ton of twisted meat infinitely
