    Looks delish. Can you cook it in the oven, same time and Temps, as well?

      Would very likely work especially in convection oven. As standard oven is moist air, probably would not form a great crust like on the grill but would absolutely cook to internal temp. Could solve that by removing near end of cook, turning oven waaay up to like 500F or higher and then putting back in oven until crust forms.

    This is going to be this Sunday roast. I got a 6-pounder, that I took off its packaging a couple of days ago. It will be a cold day but I'll do it on the grill :)

    This looks amazing, but slightly more rare than I like. You took it off at like 115. What temp would I take it off for medium rare? I’m thinking like 120?

      Yes. 120. After resting it should be about 125-130.

      Thanks for the nice comment and we would suggest around 125F. If cooking for a large group, you can still cook to rare, slice to preference and then just dip the slice in a hot au just to bring up the preferred temp.

      All good, everyone likes it a little different. You can a) let it increase to a higher internal temp or b) pull it a the same temp and after you slice it, boil some beef au jus and put your slice in until it reaches your desired done-ness!
