That’s kind of what I’m thinking. I do a thing called a beast drop that I could substitute the pork with a pickle chunk.

I suggest thinner pickles so you don't have to overlap the bacon. If it one slice of bacon and they don't overlap it will cook quicker and be crisper as well. I never done them with cheese so I will try out. Thanks!
