      @Joaquin Au Yea if you tasted plastic in saffron that's probably what they sold you as saffron. I was born in Iran, the capital of saffron in the world, and had the opportunity to taste the real deal and it's unlike any other spice. Actually in Iran we don't call it a spice, because it's not even in the same league as salt or pepper, saffron is saffron, it's not a spice. The problem is because of politics Iran can't really export anything straightforwardly, so what I had in Iran is pretty hard to come by elsewhere although you can find it in some Iranian supermarkets if you live in a major city in the US or Europe.

      ​@Joaquin Au What do you mean? You know you shouldn't just dump saffron into water there is a making process. I know the method is different for every country but you can also try the Iranian method, search youtube for Persian rice, or any persian dish and stew, and most of them include saffron.

    I planted 100 saffron bulbs earlier this Autumn in a garden raised bed here in the southern Willamette Valley. The bulbs came from a family farm in France. It was a real pleasure to harvest our first homegrown saffron threads. The flavor is incredible and the color very strong. Thanks for posting this video. I enjoyed it very much.

    In Iran, we use saffron in most foods and sweets, and it is the main food spice in every Iranian home.
    It does not matter how expensive saffron.The main taste of Iranian food is completed with saffron. If you come to Iran one day, try saffron Plo, saffron ice cream and saffron kebab chicken.

      Jennifer : it is common in India to have it with a glass of milk. It is also used in biriyanis. For 3-5 gms it costs like 250 rupees which is like 3-4 dollars.

    I am a pro chef from Croatia , and i use saffron in the dishes , but you have to put little . I use it for food coloring . I will quote Gordon Ramsay " It's expensive as hell " 😂😁 . In Croatia we call it "Šafran" .

      Yea, Iranians put just half a teaspoon in a pot of rice. It's not something you'd use in excess.
      @cha0s_dvl11, it has its own aroma but in rice, it gets masked mostly. There are certain deserts though for which it's considered an essential ingredient specifically for the aroma it provides.

      Saffron though (unlike diamonds) has legitimate supply side pressure
      as crops often fail in certain regions or sudden climatic/ weather issues spoil the quality.
      it is the corporate level players in the diamond industry that keep the rock prices unrealistic.
      but saffron in mostly fractured market with SMEs only!

      Actually, the name is: "Arash Ghaleh Golab Behbahani". The last name is 3 words. But when you come to USA, you have to remove the spaces between the words because people may mistake parts of your last name with a middle name! That happened to my friend and his tax returns got all screwed up.

    Fun Fact: Saffron is very popular in Sweden because it is used in a pastry called "Lussekatt".
    It is a tradition to eat Lussekatter (saffron pastries) when it is Christmas in Sweden. 🙂

      Beh-ba-hani. The problem with English speakers is they don't pronounce the "h" in the middle of a word. All the Iranian names with "Mah" (Mahnaz, Mahsa, Mahvash) are butchered by pronouncing it as "Mea." Of course a name with two of those would be impossible to pronounce for them, and that's just the second part of his last name.

    To everyone who responds to people who use saffron with "Are you rich!?":
    Saffron is very expensive in large amounts, but you only need to use a very small amount of saffron to make several servings of the food in question. A small glass vial or saffron costs around $6, and I'm pretty sure you could make a lot of food with that.
    So no, you don't need to be rich to use saffron.
    Also: Saffron comes in many grades. High quality saffron is very expensive. The saffron in the video sounds like it's high grade saffron.

    As a Persian I am proud of my country producing 90 percent of saffron in the wworl not only most expensive but also highest quality and flavor comparing to other saffrons produced in other countries. I wish everyone in the world could taste it.

      In Iran , 5 dollars a day is a lot and you can get a lot of stuff with it , for example in London when you go to the salon to your hair done it costs you 15 pounds but when I went to Iran I had to only pay 3 pounds (my mother is Persian) and everything there is pretty cheap.

The time lapse video of saffron flowers which is included in this video is taken by me when I was working on Saffron flowering project at CSIR-National Chemical Laboratory Pune. We also got a good result of in vitro flowering as well as greenhouse flowering. Filed a patent on in vitro flowering.

    I use saffron daily as a health support. I use it to avoid migraines and also to ease depression. I have been off anti depressants for almost 3 months. I put about 8-10 strands in my mouth and let them stay there for 10-15mins. They become hydrated with salvia, then I chew it. I used to wash it down with water, now I just leave it so I get little bonus bits for a few hours haha. It also helps with gum inflammation and mild tooth aches. Just keep moving the strands back to the point of pain and wait 15mins and it will offer mild relief. Really hope this helps someone.
    I'm from Australia, where I live we have a large multi cultural community, so I purchase saffron from Afgan or Idian supply shops for $20 AUD for 5gms. I really happy with that because used to be about $12 AUD for 0.1g from major supermarket.

      You're not the only one who noticed this effect. Interesting. To get the most out of it try a tea. Put some hot water in a cup with a spoonful or so of sugar, then add a pinch of saffron and give it a gentle stir and allow it to steep for a minute or two. Should have a golden colour, and a warm, pleasant aroma.

    For people who are curious about the taste: (I'm Iranian and we use it a lot)😊
    Saffron doesn't have any taste but when it's ready to use, it has a golden red-yellow color and the smell is sooooo sweet that you might think the taste is sweet as well (but it's not!)
    The smell is like smell of flowers that makes you so fresh and happy!(Probably one of the best smells I've ever tried❤)
    Couple of drops of that can give the food a strong yellow color.😍

      The most expensive Saffron comes from Morocco. I'm from Morocco and I can buy the Iranian Saffron for less price yet we know the quality may be different. Iran produces larger quality compared to Morocco though. In Morocco, saffron is harvested in a very small area in the South called Imin Tanout that's why it is extremly rare. The saffron from much is darker than the one that comes from Iran. It is also more dry and it gives a special distinctive flavour and more colour. The hot weather of this area combined with mounatnous breeze and a bit of rain during the rainy season is perfect to produce such high quality and flavour. This kind of weather also means that the saffron flower is too delicate and a season of drought can easily destroy the flowers.

      It's just part of the list of things it can deal with, also demonstrating that it is useful in a normal day by day basis of the standard person ... you are free to make the equivalence, but this is only you chosing to read it in that way. Also some women would rather be thankful to know that if they have strong PMS (it depends from woman to woman) they can deal with it through a delicious (although expensive) meal.

I know there are probably 200 or more different kinds of biryanis on youtube and all of them are just self invented by people and they call it biryani,its just disgusting . Im glad that i learnt this century old recipie of biryani from my ancestors who were nawabs of hyderabad telangana and i cook it almost every weekend and believe me bro i cab never get enough of it. saffron is a key ingredient of hyderabadi biryani, it just adds an aroma and taste of royalty to this amazing delicacy. Im glad to speak with you and really happy that you understand the authenticity of our pride.

    Flowers tend to have shallow root systems let us assume this is true also with Saffron.
    So, grow it in those gardening trays that are very modular and mobile.
    Have the trays run through picking station factories, use tools similar to remote surgery tools. You don't need super super high quality ones either, you just need to have cameras to help the software that controls them locate the stamens to pick them.
    You can train your picking algorithms on cheap flowers with similar general shapes and vaguely similar color contrasts. Should not be SUPER hard to beat 5000 USD a pound if you can get a set up running over 30 pounds a year.
    Yes, according to the video they are getting yields of 4 lbs an arce in the hills of Iran. Remember they probably aren't bothering to fertilize and that this is outside. What you might want to be doing is to grow test beds of flowers and be on the look out for plants with more than 3 stamens or plants with more than the normal number of flowers or even just larger stamens. You also want to be looking out for flowers that open at abnormal times or just more often. These are the general types you want to breed to create your stocks.
    I am just an internet person and I am not a Saffron or any other type of farmer I am sure a commercial farmer could be even more effective, but it is obviously possible to cut out the human labor costs involved in a lot of the steps of harvest and preparation. Remember that Iran does not have the types of sophisticated robotic automated harvesting equipment that we have here in the States, not does it have the engineering to design variants adapted to this purpose.
    One should also take care to remember that using light capturing mirrors and refocusing you can even simulate different light levels than your current latitude has as well as trick the plants into thinking it is whatever season you want. Assuming this plant is as expensive as is stated and that the demand volume is there I would expect that some people will work out the rest of the kinks involved and drop the bottom out of this market.

      Someone would if there was enough demand for saffron in first-world countries that apply advanced scientific knowledge to agriculture and economics. A 46 metric ton per year demand in the U.S. is basically nothing, in economy-of-scale terms, so it's not really worth the up-front investment to anyone to set up an engineering effort to develop high-yield saffron. If the demand got up into the hundreds or thousands of tons, though, I'm sure you'd suddenly see high-efficiency automated saffron growing operations and new cultivars that produce way more yield.
