The orange stuff is a kind of bioluminesant. If you scoop a pool with prawn or shrimps in the dark, you will see them flashing orange in distress, and when they are used live on the end of a hook. Best way to catch live prawn, low water tidal pools in the dark, shine your headtorch quickly jn the pool, see all the eyes glow up, switch the torch off and scoop, that's when you'll see them flashing orange. And uts also amino acids they give off when they are dead, same as most other baits, like ragworm for example, soon as thise die and start stinking, it's the amino acids that attract the fish.
