This is not a breakfast. The alcoholic drinks tell you that this is brunch. In New Orleans they'll tell you that brunch without alcohol is just a sad, late breakfast.

biscuits and gravy is usually white gravy, but sometimes when people make it from scratch and use the sausage grease it takes on a more yellow/brown color.
It is still white when made from scratch. The color probably comes from some cayenne pepper, mustard powder, and/ or some paprika.

Any dipping is not just allowed, its encouraged! Some may not like it, thats weird, but okay. However, i feel pretty confident saying most southerners will dip anything in the leftover gravy on the plate. Yummmm

However, to be safe I will translate. Here's what they said: in the south, you're expected to get the chicken from the plate to your mouth and any stop along the way, so long as it isn't the floor, is acceptable.

1) Don’t drop it.
2) as long as you have your own gravy, cheese, sauce, or whatever else you are dipping in (as long as it is yours and not anyone else’s at the table,) it is “allowed.”

The fact that there was a debate on dipping fried chicken in gravy is insane to me. It is delicious. The people opposed to it are probably the ones dipping theirs in ranch and ketchup. Lol
I agree! Ranch dressing and ketchup are grossly overrated! Give me good old gravy over those any time of the day! And you can dip whatever you want into your gravy!
We have gravy in all colors here in the USA brown, yellow, white, yellowish is chicken gravy most of the time because of the frying and herbs. Country gravy or pepper gravy is white. Sausage gravy slightly yellow Everything is allowed, we have a saying "don't knock it tell you try it".

Grits are basically like polenta, but made from white corn, instead of yellow. And, they're more finely ground, so they have a creamier texture and take less time to cook.
Brunch is a meal you eat with breakfast and lunch together. It is usually held late morning to early afternoon.

The thing about brunch, which is what they’re eating, is it’s supposed to be a combo of breakfast & lunch as well as typically eaten anywhere from 10 a.m. to 2 p.m so a lot of what they’re eating is not something people normally have for breakfas. For instance I’ve had shrimp & grits at various times for lunch & dinner yet would probably never think to have it for breakfast and I definitely wouldn’t want ribs early in the morning.

Grits are like polenta. Grits use white corn. Polenta uses yellow corn. And like artisan or "authentic" oatmeal, artisan, stone-ground grits are HEAVENLY. RICH, CREAMY and satisfying.
If you are in the South go to a small diner for breakfast. Biscuits and gravy are wonderful. Polenta is close to southern grits. Add cheese and pepper a minute or two before done. Good enough to make your day! And yes we can eat steak and eggs in the morning. Any type of food any time of day. Hope you can come to us and see!!!
Making sausage gravy is super easy you brown off ground sausage then sprinkle in flour and combine that with the sausage fat and slowly add in milk and stir it and it will slowly thicken up then add black pepper to taste. Biscuits if you can find any prepackaged makes it the easiest to bake. If not biscuits aren’t difficult to make
The question will be what type of sausage does he have there? Probably not our typical breakfast sausage which means it won’t taste the same. Who knows it might be better lol

Biscuits and gravy is very simple. Look up a recipe for southern biscuits and gravy you will EASILY MAKE IT!

The way to do southern fried chicken is to double coat the chicken before cooking, brown it completely on medium high heat, cover the skillet and turn down the heat to medium low heat and cook for about 20 minutes, then uncover and turn heat back up and fry until crispy. This ensures that the chicken gets done in the middle.
When having BRUNCH in the US, it is customary to have a Bloody Mary [tomato juice, a dash of lemon juice, salt, pepper, a dash of Tabasco Sauce and Vodka garnished with a celery stalk] or a Mimosa [Champagne & Orange Juice]. If you're not driving and you're in no hurry, have two or three .. especially if you're at a seaside resort.

Grits is a Southern breakfast food! It’s made from ground corn. It’s also a dinner food in parts of the South! In Georgia we typically eat grits with scrambled eggs and either sausage or bacon!

I was in Indiana recently, everything was so bland relative to what I am used to in the south.
@@seanpatton7406 I make my grits 1:1:1 grits, milk, water. They come out super creamy. Then I add butter, crushed bacon, and enough sharp cheddar to make little grit balls on your spoon.

No, it does not ruin the chicken . Looking at all of the southern food videos , I've not seen smothered chicken or pork chops . That is the meat fried then make the gravy and simmer the meat in it .

Alabama raised here. One of the great things about southern brunch is the casualness of it. Yes you can dip your biscuit into the gravy and mix and match all you want with no judgement. Also yes, you can order alcohol for brunch (breakfast+lunch) and it is fairly common to order a bloody mary or a mimosa. As a last side note grits are one of those things that you either love it or hate it. Taste by itself is fairly bland so it is often paired with other flavors or ingredients.
OH YES! Make biscuits and gravy for you and your wife. There are many recipes on TH-cam and they are easy. You will love it. I would love to watch you try it for the first time as a reaction. Even better would be if you also make the chicken and dip it into the gravy. The most difficult part of doing this is preparing enough gravy because most people want more.
If you're active you can eat this way.... I eat all sorts of this stuff, and I love it. I stay trim because I burn it off and sweat it out.

Gravy is legal on almost everything!! White milk gravy made with the grease chicken is fried in is sooooo delicious!!! A fried egg on top of the grits is really tasty!

Grits are corn made into a rough flour (looks like seeded wheat bread). It's a little, um, gritty. But that's the texture, love it or hate it.

You can 100% make biscuits and gravy. You need breakfast sausage, butter, flour, milks and biscuits. It may take a couple tries but you can totally do it.
Grits are the same as polenta, the only difference is polenta is made from yellow corn and grits are made from white corn.

Find a video of someone who shows how to make American biscuits and gravy. That will show you how to read the recipe and how to make both. Don't just try making the recipe without watching a video. You can then use the recipe and make the B&G.
As far as the color of the gravy in this video, it mostly depends on the spice mixture the chef uses to make it. I'm sure it tastes very good but you probably won't get recipes on the internet for the combination to get this yellowish gravy. So, anyhoo, try to make B&G after watching a video and you, too, can have true biscuits and gravy American style. It's not that hard because it's pretty basic . . . but sorta kinda delicate. Big bonus if you video yourself while making and post it so we can see how much you like it.

Cholesterol: They seldom tell you that your body makes most of the cholesterol, more so than you get from your food. There are vegetarians who have high cholesterol.
And one of my sisters is one of them, a vegetarian marathon runner who looks like her total cholesterol would be 140 but fights to keep her cholesterol in check. I’m the polar opposite, my doctor was upset with me years ago because she said I had the total cholesterol of a five year old, it was 135 and I’m not a vegetarian and don’t exercise as much as she does. Your personal physiology has something to do with it.
Cholesterol is not fake news, the person who said that will be lucky if they don’t have to worry about it, because the consequences of ignoring it can literally cause a heart attack.

Not sure about Europe. Here in the U.S., I can go to the grocery store and get a packet of gravy powder. Premeasured flour and what ever flavor. (White, sausage, brown, chicken, turkey, beef, pork and more flavors). Really easy to cook. Bring 1 cup of water per pack to a broil and whisk in the gravy pack to boiled water, cook to 1 minute and done. Some gravy is little bit more to it. Add gravy powder to cold water then add that to the boil water.
Buiscuts and gravy is so easy once you understand what's happening. Just find a recipe online from southern living or something.
Breakfast + lunch = brunch. It's late morning, about 11:00, that's why there's alcoholic drinks served. You're combining the two meals together. Grits are delicious if you cook them right. No instant grits, they're gross.
When you visit USA you will not be disappointed with southern cooking.

Grits can be pretty nice when made properly. I used to eat mine with brown sugar for breakfast. Grits is a type of grainy porridge made from corn derivative.
Brunch is usually had around 10-11 am. At my summer job, we have brunch on Sundays before work.
I'm nearly 40, southern, and fat, and my cholesterol is still 160. I owe it to being mostly vegetarian, but I love chicken biscuits 😂 However the ones i eat are about half the size of the one in the video! And we don't eat this way Mon-Fri. It's more of a weekend thing to have a crazy breakfast/brunch. A lot of times it's so hot in the south we just have cold lunches like a tomato sandwich or a salad. A lot of us grow our own produce, and we enjoy our vegetables! And i don't know anyone that orders dessert unless it's a special occasion.

'country' gravy is flour and milk based, thus it's white. but here in the South, we add lots of spices and seasonings to it to make it more flavorful... so the spices change the color slightly... the same with our batter for deep frying foods... we season it with spices to add flavor... so it has a slightly darker color when finished frying..
Cholesterol is real. Some people are more prone to having a higher cholesterol than others. The "good" cholesterol (HDL) is the number to increase. The "bad" cholesterol (LDL) is the one to lower. Diet changes, along with exercise is where to start.
I would recommend watching YT vids and research books to learn more about lifestyle changes.
Prescription medication can be effective but they do have side-effects.
High triglycerides are worse than high cholesterol. You need cholesterol for your brain to function. I have genetic high cholesterol but normal triglycerides. My doctor said change in diet won’t help (it would if both cholesterol and triglycerides are high). I take medication for the high cholesterol. All that being said the south is not the place to find a low cholesterol diet😄

I don’t live in the south, but I do know sausage gravy and fried chicken, my neighbor was from Mississippi. And she taught me that gravy can go with anything.
biscuit breakfast sandwiches are in every store and gas station and restaurant in the South... you can get nearly any meat on it and other stuff as well. cheese, fried or scrambled egg, sauces or something else like ketchup, and bacon (as extra OR the main meat) are typical things that can be added.

I love biscuits and gravy. 😊 yes you should try. Don't be disappointed if it doesn't come out perfectly the first time. It took me me several times to get it right. Now I use a dry beef gravy WOW it is good. 😁

To help lower your cholesterol, make eating oatmeal a regular habit. I like to dress mine up with cinnamon and raisins.

Yes.. breakfast grits are a lovely sweet dessert with maple syrup or cane syrup buy savory with hot sauce, peppers and shrimp is awesome.. polenta can be eaten with shrimp. True southern biscuits n gravy has them southern mom's top secret biscuit making skills that were passed down for generations. LOL. Good luck trying to get them to come out right without knowing the secret technique. And it's a compliment if ya' "sop up" the leftover gravy on the plate with a extra biscuit or some fried chicken.

Sometimes, gravy will change colors because of the spices in it. I love putting smoked paprika, a little bit of chili powder, and a pinch of cayenne along with the normal amount of salt and black pepper. Sometimes, i make gravy with bacon grease, other times it's ground sausage. Oh and if your sausage doesn't have fennel in it, then it's best to add fennel seed to the meat when it's browning. The fennel seed is more important than a lot of people realize.
my Creole grandmother taught all the grandkids how to cook really good... so I know how to cook all this and MUCH more great foods....
basic grits (rough ground dried corn) looks like mashed potato but is closer to oatmeal porridge, but gritty instead of mushy. a couple pinches of salt (NOT sugar, that ruins it. sugar is for oatmeal, not grits) and a couple pats of REAL butter finishes it off. BUT you can add stuff to it. usually a meat of some kind. ham, bacon, or sausage are the most common, but others, like shrimp or crawfish, can also be used. AND you can also put in stuff like cheese (to melt) and even some people like fried or scrambled egg... AND if you decide to throw in some spices, that can add to the normally bland flavor....
In this video, they added a pan fried soft egg and some cheese and shrimp with a couple slices of radish and parsley for color. and etouffee sauce (I would never put etouffee sauce on grits, but to each their own).

We have many types and colors of gravy.
The color of the gravy is due to the meat fat/Grease browned to perfection with flour. That fat is what makes is so delicious, and so unhealthy.
Flour and bacon or other fried meat grease =Roux + I add a little 'Gravy Master'.

To solve your fried chicken problems: Brine it first, that's what gets that uniform juicy looking interior. If you don't want to look up how to do that, soak it in pickle juice for a few hours (not overnight unless you're making your own brine). Then make sure your oil isn't too hot, you don't want it much above 121c (350f), a thermometer is crucial. How to bread: 2 stations, dry and wet. Wet is beaten egg with a bit of the brine to thin it. Wet is going to be seasoned flour with maybe 1/4 tsp baking powder and make about 1/8th of the flour cornstarch. Don't oversalt the flour, the brine will salt it from the inside, but do use some salt and do season it. Paprika, cayenne, etc. First dredge the chicken in the dry, set on a plate, drizzle a few spoonfuls of the wet mix into the dry, and kind of mix it through so you have some wet chunky bits scattered about. Then dip in the wet and back into the dry. Fry at 121c for about 8 min total, the temp will drop when you add the chicken so keep an eye on it, you will have to mess around with the temp to get it back up and then maintain. Let sit on paper towels when it comes out.
Grits are yummy! You just have to know what to mix them with. You need salt, pepper, plenty of butter and cheddar cheese. I prefer the cheese right off the block but the preshredded is good too. It's an art. Come down to Alabama and I'll feed ya right. Great reaction. You're so funny
I adore when European people come to America and just dip everything in anything. It's so whimsical and funny. My grandpa used to mix everything together on his plate(This is not typical American behavior)and eat it. He would say, "It's all going to the same place." it just reminds me of that. Absolutely make your own biscuits and gravy. Americans make European food at home all the time. Go for it!
Sausage gravy is super simple to make. The biscuits can be challenging if you've never made them.
But for the gravy: brown a pound of breakfast sausage. Add 4 tablespoons of butter and let it melt. Sprinkle 1/4 cup of AP flour over the top of everything. Stir well and cook for a minute or two. Add 2 1/2 cups of milk and a good amount of cracked black pepper. Simmer stirring constantly until thickened. Remove from heat and pour over biscuits.

When Katrina hit New Orleans, many refugees there were moved to our town.
2 brothers were moved here, and several years later, they started a cajun restaurant and named it Lenny Breaux's. The small restaurant was super popular because it was so unique and authentic Cajun food. Word got out all over the region, and people come from all over to eat at their little restaurant.
They rescently bought out another large local restaurant that the owners retired. They will be opening at their newly renovated restaurant this weekend!!!
Every Wednesday, they make Shrimp and Grits. It's heavenly. Grilled shrimp, course ground grits, cheese, onions, and some kind of cajun voodoo!!! 😆 🤣 😂

Grits are made from "dent corn," which is just a softer variety of corn. The corn is dried and ground into bits. Add water and boil until soft for basic grits. Add butter or salt or bacon or eggs or cheese or shrimp... Basically, whatever you want & eat lol
In American cuisine, I feel like everything is allowed except eating off the floor. My guess is that that is a white gravy base that may have had some spice added to it since they mentioned it having a kick. Adding chili pepper derivatives will turn a pale sauce orange or pink. Also, as others have said, grits are ground corn. This is particularly interesting, because you use the corn culinarily the way you would use rice, but corn is sweeter and more tender than rice as the kernels have high sugar content and low fiber content.
They are eating brunch. Which is a very late breakfast/early lunch. We have either a Bloody Mary or a mimosa (champagne and orange juice). The alcohol helps with a hangover. They are in New Orleans where the bars are open 24 hours. New Orleans food tends to have a reddish tint because of our seasoning. We also put sauce/gravy/étouffée on anything and everything.
Sausage gravy and biscuit recipes are easy to find with a Google search. My biggest suggestion is to buy plain minced sausage and look up what spices are in American breakfast sausage since that blend doesn't seem to be available in Europe.
I don't know if anyone else has said, but shrimp and grits with red eye gravy is a classic, and one I absolutely love, with the red eye gravy being made with country ham and coffee. It's heaven on a plate.

I sometimes top my biscuits with some scrambled egg before I pour the gravy over it, for an even heartier meal. Grits are made from ground hominy. Shrimp and grits can be pretty hit and miss depending on where you're dining.
Hi. Here is my two cents worth. I have lived in Louisiana for 22 years now. This white gravy is a product of sausage or bacon drippings and flour heated stirredinto what is called a 'roux' (roo). Then the other ingredients, including sausage bits finish out the gravy. It is supposed to be thick, and cracked black pepper is also added.
Grits are made from grinding hominy, a halfway similar to corn. It is the same texture as 'cream of wheat', with a different taste. It is a base, that you can add bacon, a type of coffee gravy, shredded cheese, melted butter, anything to make it tasty.
Now, I will suggest a dish that you can find the recipe for, "chipped beef on toast", or as I, a GI remember it "s*it on a shingle".

I ate at a little restaurant where the tomato on a BLT was a fried green tomato and the bread was Texas Toast. So yummy.
It's easy to find Southern biscuit recipes online, and you need to add "hints" that you find (super cold butter, don't twist the biscuit cutter, etc., but it's all doable) and white or pepper gravy, which is super easy. I don't eat sausage, so just have pepper gravy, but its the base for sausage gravy.
just need sausage, flour, milk/cream, pepper, salt it's a pretty simple process, plenty of videos on how to do basic sausage gravy. After you get that down the fun part is adding what you like.
