I am so glad you did this because it is so timely for me. I just got one in the mail yesterday. I ordered it after watching Ukulele Jay BBQ test this out. He is a self-proclaimed not a knife sharpening person and he got excellent results. He is a chef so certainly more knowledgeable than he admits. Cannot wait to try mine out this weekend. I am still going to buy the upgrades to the WorkSharp Pro once they come out since I don’t need another base unit. I think I am well covered now for my sharpening needs. Love your channel. Made me into a knife appreciator.

Nice system if like you said you only want to do kitchen knives. You could buy an Atoma replacement plate and cut out some circles if the replacement ones cost to much from the company lol. At the very least simple to use with the least amount of leaning curve top keep your kitchen knives in good shape. Thanks for the great vid and keep making sharp things fun and enjoyable.
Have you seen the new Xarlik rolling knife sharpener? It uses rectangular stones/plates instead of round. It would be nice because you can probably use other plates meant for guided sharpeners but I’m curious what you would think about it since the stones don’t rotate so they are only going sideways across the blade. Not sure what kind of edge that would leave and that could wear out only a part of the stone instead of evenly, although you can adjust the height of the stone to use more of it. This is a nice system you reviewed though and not a bad price, aside from the replacement plates being a bit pricy for what they are.
Ugh, so many options now. I have an old lansky system I inherited. I bought a wet stone kit that I haven’t used. But now for someone who just needs to maintain kitchen and pocket knives. Which system seems to be good? This rolling system, a Ken onion belt system or just taking time to learn freehand on diamond stones and strop
I was wondering how that rolling strop would work because in my mind I was thinking exactly what you showed that all it would do was cut into the leather. I don't even think it locked in sliding parallel to the knife apex is effective. It just doesn't make sense and I though it was silly it had the number 1 and 2 but the 700 was coarser than the number 2. I agree probably looks like the better of the rolling systems but it should be number 1 and 700 and your right 1000 is kind of obsolete so they should change it to 1200 and 2k.
Horl is definitely better quality as far as there premium one, it has 3 rotations for every one, but the cheaper one from Joel is about even with this one. One cool thing from horl is the use both synthetic and diamond.
@@Gringoricanisn’t the professional elite the new setup with the resin bonded diamond stones? That setup is $450. I learned to freehand because I got fed up with trying to get consistent with the worksharp pa so I could see the value in the simplicity of a system like this.
@Dude1971Dad yeah for the full set of disc's it doesn't come with anything else you still have to buy the rolling sharpener for $99 and then another $40 if you want the finishing plates and stick on discs.
The average person buying this is for the ease of use. They probably don't have the experience to hold a consistent angle(wet stones). Seems silly that you still had to use a regular strop for these. Most people will not be able to get the same result using your method.
Am I the only one that just gets an uneasy feeling because of the knives out edge up? Oh, and I know it’s irrational. After all, clamping systems hold the knife edge out facing the user and I use them with no issue. Something about these rolling knife sharpeners always gives me the creeps. Edit - just a little advice that probably seems obvious - masking tape is your friend when it comes to sharpening. Using some to protect the handle here is a no brainer. I mask off bit of handles/bolsters/guards as a regular practice. I know I have steady hands and I pay attention, but accidents happen.
When I watched myself back i seen that I smacked my hand on the rubber magnetic thing holding blade, and I thought to myself you gotta stop that rt now lol

@Helofelokids just not sure i need the extra feature/cost. I collect folders and fixed blades and then of course kitchen stuff. I mainly want to be able to do the polished edge. Then again buy once cry once is facts.
$128 is just for the add on accessories. Plus $100 for the system itself. Plus $32 for the ceramic disc. Plus $40 for the micron tape.

how do you sharpen a serrated edge knife - or do you?
@pascuba the easiest way is with a Dremel and a diamond bit, otherwise diamond files or just files period
