You pay more for skin on i assume because of wieght ,the seller loses money if it ways less . Well i know we sell whole fish if you want fillets we charge by the weight of the fish whole than fillet it .thats how the company makes money. We also sell fresh fillets . We don't charge for skin off salmon but i weight it before i hand over to the filleters to take it off . And some fish breeds have different texture skin it gets stripped off rather than cut along . Im Australian work in the markets .
Very thin fillets people prefer thicker cuts. After its battered that'll be very disappointing. Sorry its just an observation as our customers hate thin/skinny fillets. We only sell loin cuts behind the head...

Meaning, if you pay for product with skin on and you remove it yourself, you're now cutting into your own man hours to do extra work. The difference in fish price (skin on vs skin off) is fairly insignificant.
