    The finished fillets looked too thin.

    You pay more for skin on i assume because of wieght ,the seller loses money if it ways less .
    Well i know we sell whole fish if you want fillets we charge by the weight of the fish whole than fillet it .thats how the company makes money.
    We also sell fresh fillets .
    We don't charge for skin off salmon but i weight it before i hand over to the filleters to take it off .
    And some fish breeds have different texture skin it gets stripped off rather than cut along .
    Im Australian work in the markets .

    What do you do with all the left over forskins 🤔

    Very thin fillets people prefer thicker cuts. After its battered that'll be very disappointing. Sorry its just an observation as our customers hate thin/skinny fillets.
    We only sell loin cuts behind the head...

      Could be the same reason why lots of small businesses close, greedy landlords who put up rents regardless of how bad trade may be.

    did dougie he say he paid more money with the skin on? i would think they charge more to have it removed so its cheaper for him to do that instead , what is dougie talking about?

    • @anthonysharp6288
      @anthonysharp6288 3 ปีที่แล้ว

      Meaning, if you pay for product with skin on and you remove it yourself, you're now cutting into your own man hours to do extra work. The difference in fish price (skin on vs skin off) is fairly insignificant.

      @@anthonysharp6288 i guess it depends on his situation there ,but for example when i buy fresh fish they sometimes charge extra to scale and gut but sometimes its included in the price if its more expensive fish otherwise i do it myself and save the money
