I love how this chef is not aiming for perfection like other cooking shows. Rather showcasing something great despite all the challenges and mishaps in the kitchen. Keep it up! Very relatable as a homecook
Has anyone else made this? My wife loves ube, so I gave this a shot. There are several differences between the video and the ingredients listed in the description, as well as some differences between what is stated and what it actually looks like. Some examples, plus what I learned from making this: Video doesn’t state how much condensed milk to use, description says 2 cans of 380g, which is way more than he puts in. It looks like 1 can in the video. I used 1 can, it was plenty. 1 stick of butter is 1/2 cup. Description says 1 cup (2 sticks). Martin says 1 bar but video has 1 cup written. 1 stick (1/2 cup) is plenty. I highly recommend adding the evaporated milk when you blend it. Not in the pan afterwards. Keeps the blender from breaking. Video says 2 eggs, description 3. 2 is good for 1 pie (same as pumpkin pie). He says he sets aside 4 cups of the halaya mixture for the filling. That’s way more than needed. You can’t fit that much in the crust. 2.5 cups was pretty good. Video states to add 1 cup each of sour cream and all-purpose cream. Description says 1/4 cup sour cream and 1/2 cup all-purpose cream. I used the description proportions with 2.5 c of halaya mixture. That was thicker than what the video shows, but looked good after baking. 30 minutes was enough baking time with that amount of liquid, if I’d added 1 cup each it would have needed much longer. Whiskey was 2 T in the video and 3 T in the description. I didn’t have any and left it out, so I can’t comment. I will say that it’s good without. I’d be curious to know what others have done with this.

Thank you for the technique that you have shared...blind baking is really the best...adding egg to your halaya will make it more creamier and tastier...egg washing your pie dough is a new idea that I have learned...adding whisky and sour cream will further enhance the ube flavor...galing!

It's a great upgrade on our favorite regular halaya that my family usually partners with suman or palaman sa pqndesal. This one will be good by itself.
