That "sliding door" is called 趟栊(tang long). It functions not only as a security door, but also as an airway for ventilation. Its unique design makes it an excellent choice for households in Guangdong area (known for its heat and humidity during summertime) in the past when ACs were not popular.

Chaozhou was never famous in most time in history given its late assimilation to Sinitic people, much like most of Guangdong and Hunan. However, this changed as, in the recent 200 years, many of the Chaozhou(Teochew) moved to SEA. They established successful businesses, started to modernize and introduced ethnonationalism into China, which directly leads to the Xinhai revolution. A lot of them also contribute financially to the education, modernization in China and aid China during WW II. Still, nowadays, SEA businessmen of Teochew origins play an important role in connecting the business world and political elites of the SEA to China.

I am not sure whether your guide actually is from this area and actually knows the history of the real Chaosan. Many of the Chinese people in many big cities are ‘Han’ Northerners. A majority of the ethnic Teochews or Chaozhou people migrated to countries like Cambodia, Hong Kong, Indonesia, Malaysia, Philippines, Singapore, Taiwan, Thailand, and Vietnam. Some also migrated to Western nations. Apparently, there was tyranny during the Qing dynasty and many Teochews as well despised Communism.

Not safe is true, as many people die each year of suffocation when gas isn't turned off properly, there is a leak, or even when there are no windows open eliminating air circulation. A danger not only in kitchens, but bathrooms moreso.
