Today I was being jumped by a whole clan so I threw a whirlpool potion right before they would ram my boat and they got stuck, and they made the bad choice of abandoning ship and trying to jump onto mine because I threw 10 bleeding potions in the water and knocked then used javalin and ash magic to do area denial for my whole boat, while my secondary element, wind, knocks them off my boat and into the sharks. I won with ease
When escaping a whirpool, you want to move in the direction of the wind, which is indicated by the visual effects seen on the surface of the ocean. My understanding is that this is because having wind in your sails boosts your speed, increasing your escape chances. Citation needed.

Edit: Although, this doesn't account for the potential of a neutral 'not against or with the wind', but I'm not entirely certain of this is a state or not. If there is a neutral state, there would likely be a true speed boost from wind. If not, than going with wind/Neutral to wind would still effectively be a speed boost.
This is actually how I do it but I don't mind the wind direction, whenever I get stuck, i just keep turning my ship until it dislodges, works most of the time and the whirlpools do minimal damage.
Another fact is that bleeding potion doesnt need any tier or how many you put, it just a chance of spawning poison shark. also you can spawn white eyes on perfect mastery on potion
You don't need perfect mastery on potion brewing. I summoned white eyes by Palo Town with a moderate bleeding nova potion (Tier 2 bleeding). My mastery was excellent though.
A useful feature of novas and supernovas is that they detonate in contact with the water surface, making it easier to properly aim ocean related potion effects
Note: watch out for a clan lead by a player named Moonacity, they have a rep for teaming and grinding fame by teaming against others. Switch servers if u find em. Umbra is the most toxic in their clan. Clan name is Cowgirl and Smth else I forgot, be wary of em. It’s a group of 4 rn. Copy and paste this so more ppl know.
Actually, you can spawn whirpools and sharks with a normal throwable potion, you don't need to create a nova/supernova potion. It just has less power, but it's still possible.

For me I’ve escaped the biggest whirlpool by going with the current instead of against it, I have no clue why but it works for me
the whirlpools one isnt exclusively to high speed ships, I think its that whirlpools have a specific angle at which its easier to escape
