My wife just commented who use cooked carrots in a carrot cake. Lol..I told her about my Guru, you! She has never made one or really ever baked cakes during our 59 years of marriage. I am the baker in our house! Lol..I enjoy it. I have made several of your creations and thoroughly enjoyed each one. They loved the hummingbird cake. Everyone said it was so moist and tasty. You added nutmeg to this recipe. I love nutmeg also. I like what you did with the pecans on the carrot cake. If anyone ask what it is, I'll say pecan dust. Very good idea when you don't want to put larger nuts on top. Watching you, it doesn't take long to put this cake together. Especially not using the mixer. This looks like another winner. Definitely will try it. A couple of days after I made my comments, I did make this cake. As expected it was a winner. We have a lady at out church who makes this cake but does not like spice so she puts only about a half teaspoon of cinnamon in the cake and no other spice. I have. The people absolutely devour this cake every time she sends before all the other desserts are eaten. Amazing!

Looks delicious…I bake now with almond flour..had to quit using reg flour…pretty much cutting out carbs too..been a year and 5 months..my blood sugar levels are normal now. You are very talented and your cakes are so beautiful..
