I made these twice.......THEY WERE ABSOLUTELY SMASHING!!! The buttercream had a lovely caramel flavour, the cupcakes were deliciously moist! There was one hangup, though.....my caramel refused to thicken, and it was the consistency of milk, so it was a difficult task to pipe the filling....i followed the recipe quite precisely, though and it does taste great.
AlexisBlack2000 Try it with a little less cream. It might just be your cream isn't thick and fatty enough. Some cream is thicker than others! But try less and see how you go. x
Victoria Wee ,The bottom of the cases were a little greasy, but the cupcakes themselves were not. The oil makes them nice and moist. If u want to try them, do go ahead! They r quite delicious!
I made these yesterday and they came out amazing! so many compliments- the cake was so soft, the only thing i would change next time is less icing sugar as the buttercream was a little too sweet!

Even though you make cupcakes I've actually make actual cakes out of your recipes & they turn out just as good. Just baked these babies, and might I say that they are just MARVELLOUS! A word of caution to all you making-salted-caramel-from scratch first timers, start the heat low, then gradually move on to medium heat (this really does prevent crystallising). Use a saucepan and white sugar too! Makes it easier to monitor the browning of the sugar. Also, add in the cream right after you turn off the stove! The melted sugar hardens really fast! These cupcakes are REALLY AMAZING, so make sure y'all try it xx

I made these, but did a lot of changing. I was looking for a different recipe for the caramel that didn't require cream, and ended up not finding any with just milk so I used coffee creamer with a different recipe! I realize that's weird but it worked great, well at least up until it cooled and began crystalizing again. I also used a vanilla cupcake recipe because I couldn't find cocoa powder, but it actually worked really well because the caramel is already so rich. For those who want it a bit less sweet, try using less icing, I found that worked well.
made this today it was absolutely beautiful i ate it until i died hahaha !!! one thing though is that i halved the amouont of powdered sugar and it tasted amazing. anw i love you jemma i don't usually get perfect products but this turned out flawless !!

I love all your videos. I made the buttercream frosting and it was by far the best frosting I have ever had!! So worth it to take the time to beat the butter and icing sugar....Yummy I just love salted caramel anything too.
Pretty sure this is the American for the cupcakes... 3 cups, less 3 tablespoons plain flour ½ cup cocoa powder 2 cups, less 2 tablespoons caster sugar 1 tsp baking soda pinch of salt ½ cup plus 2 tablespoons chocolate chips 3 large eggs 1 cup cooled coffee 1 cup buttermilk 1 cup less a tablespoon vegetable oil sift together the flour, cocoa powder, sugar, salt and soda into a bowl. Add chocolate chips Whisk together the coffee, buttermilk, oil and eggs Mix dry ingredients into wet Divide among 12 muffin tins and bake at 300 Fahrenheit for 22-24 min

The moistest, loveliest cupcake I've ever gotten out of a recipe. Mouthwatering. Tastes like proper bakery cupcakes that everyone pays lots for! One little problem was that when I piped the caramel into the cupcakes, it sort of just soaked up into the cake. Didn't leave a nice visible caramel streak like yours did when cut open -- though in the jar, my caramel seemed to be a normal caramel thickness :/ Either way. I'm not too bothered. The taste is still there and it's a gorgeous cupcake.

If you let the caramel sit in the fridge for about 30-60 minutes and that's how i got mine to thicken up

Yeah, but none of my measuring cups have the right measurements.
I use metric for weight measurements and standard for volume. Volumetric measurements are easier to convert anyway. Just google it.
