Yeah, I imagined it was a running joke that started from lord of the board, long before I started watching. Didn't realise I actually witnessed the origin of the gag.
I mean, it's fun watching the previous episodes and counting times both horses and Sully were mentioned. For example, the BGC "Let's Play Dobbins or Bobbins" is all about horse races, and Sully is in it!
Surely there is only one way this whole horse joke can culminate and that is with Sully + Adam doing a shot by shot cover of My Lovely Horse from Father Ted.
If i had a nickel for every fandom i was a part of where there was a joke about one of the cast members fucking horses, i'd have two nickels, which isn't a lot, but it's weird it happened twice

There is also a whole lot of insight about what happens behind the scenes in reference to this running gag.
