I remember the exact time and place I first had it and remember thinking, "I want to make beers like this!" The double version was banging! And brought it right up to modern times.
Wonderful Intro Jonny. That entry beer that leads to it's wonderful consequences is a stellar moment for us beer geeks. Stepping back and reappraising what you thought was familiar and evolving it must have felt incredible.

I love this full circle story and how you came back to collab on a beer that really spoke to you 10 years ago. That's so cool to see! One thing I would love to hear more about on the technical side is how a Pale Ale can convert to a West Coast IPA - and also when do brewers decide to name a new beer versus keeping the same name while implementing *tweaks* along the way. Anyway, great episode, loved the story. Cheers!
Well like we tried to say in the video, all we really did was up the hop additions to achieve a higher IBU (to balance booze and FG), upped the whirlpool and dry hops to increase intensity, and changed the proportions according to what felt and smelled amazing on the day. Quite when a WC APA becomes a WC IPA I'm not sure but somewhere around 6% I reckon - and also once it becomes more about the hops than a balance of malt and hop.
Can’t believe after helping box up the beers I left it too layered to grab before it was packed away. TMM drinkalong box arrived today though! Recall having this beer on the night and it was cracking! 👏🍻Top work!
The beer that got me into craft beer, in the 90s, was Sierra Nevada Pale Ale (and Belgian ales). The Beer that got me into IPAs was Bells Two Hearted and Southern Tier 2x. USA resident obvi. Jonny it's awesome when you still love your origin story beer. I've mostly moved on from mine. Sad. Westie is bestie! I'd love to try that beer.
4. what?!?!?!? Actually, you don't need to say. The fact you had to cut at the first mouthful gives away the score. What a great piece of loop completion on the infinity loop of a craft beer journey. Infotainment at it's best, and amazing camera work and editing also.
They kind of remind me of a local brewery here, Trailway Brewing in Fredericton, New Brunswick, Canada. Opened in 2014, initially just doing keg fills out of their basement. Their first, and flagship beer is Hu Jon Hops, a 6.6% American hazy IPA, and now 10 yrs later, their popularity and breadth of styles pretty much has no bounds. While still a very hop forward brewery, they have delved off into other styles like Belgian dubble, tripel, German Pils, fruited kettle sours, and even have a coolship program now. They just released an Alt beer last week, with their festbier coming up very shortly (if it hasn't already been released) They did go down the road and created different versions of their flagship beer, Hu Jon Heavy is a double version, Hu Jon Light, a session version of the flagship, and even an Hu Jon Ultra, a super session 1.5% version. (strangely no Pale Ale version that I know of)

4:25 woody taste from hops is likely tannins from too high pH very common with UK breweries. Did you guys add acid before all those hops to guarantee no tannins?
Having a heady topper as I watch. Would this compare to your “pale fire”? Would love to try one of those, but I’m afraid their distribution network doesn’t extend to western New York? We're well aware of those breweries on this side of the pond. We might've invented the IPA but you lot perfected it and we've been playing catch up for years. I think we're pretty much there now 👌 I've got a can of Root & Branch in the fridge that I'm looking forward to tomorrow. For 17 bucks it had better be good. 😂😳

It's funny that you randomly open a bag of Mosaic and go straight to blueberry. It was obvious maybe 10 years ago, and now it almost become a myth due to the yielding exppansion for the last decade. I'm curious if you still pick up that blueberry notes in a blind bag sniffing test.
core range on a drug is essential there will be people who only buy a specific beer and once you get them hooked they will buy it consistantly a brewery without a core range is a brewery that wont be around in 10 years

There are a few core pales I'll always stock up on, 10 watt moon, lightbulb, hum and this Pale Fire. It's an absolute belter of a quencher. 🍻👌

I think so - some people say blueberry but I think sometimes it's a little more aniseedy than that.
