Thanks James. I learned something there; hadn't realised the resting time was quite as long as two weeks. Your Pantano is my "go to" so I shall definitely have to try Mato Grosso.

To be fair, it is less of an issue on the previous roasting system. The new roaster is benefiting from the extended resting time.
