@@thepeach4638 As a chef, I can definitely say it wasn't overcooked. Plus Guga saved those trimmed ends no doubt. He's done similar recipes/projects in the past with squaring off meat and saved the scraps too
The reason is if you want it to cook evenly throughout you will typically square it off especially with higher tier meats. Regardless those "off cuts" were definitely eaten. Just not as part of the main steak :)
