    My favorite part of all of Emmy's food vids is her immediate facial-expression whenever she tastes something for the first time. You can't make that kind of reaction artificial and she always does such a wonderful job of describing the flavor and texture of things. Perhaps agar agar would have been a better choice for this kind of dessert?

    I've had lemon meringue pie plenty of times, Mum often made it when I was growing up, but my preference is for lemon cheesecake, chilled, NOT baked. Baked cheesecakes are heavy and stodgy, chilled cheesecakes are light and soft and pure joy to eat, especially with fresh lemon juice and a little bit of lemon zest. The juice tastes much nicer in a cheesecake. Try that one day, Emmy! Especially during summer!

    Caster sugar is a bit overpriced in my stores so i just "quick blitz" regular white sugar in my food processor til i achieve much finer crystals. Takes just a couple minutes and surely saves money.

    my great-grandmother used to take those pie crust snippings, cut them into strips, cut the strips into shorter strips, tie those short strips into cute little half knots, and then fry them and serve them liberally dusted with powdered sugar. mmmmm--impromptu italian doughnuts!! :)

    Jell-O pie with meringue topping. It's lemon meringue pie in the same way that a hot dog is a sandwich, only technically.

      You can but it takes like 2 hours and it's very time consuming

      Take a can of sweetened condensed milk, remove the label wash the can. Place unopened can into a pot of simmering water, let simmer for 25 minutes. Carefully remove can, do not let boil, it will explode. Water needs cover two- thirds of the can.

The original recipe is remove label then place can on its side with water 1 inch above can then boil yes I said boil for 3 hours. must keep the can covered with water or it will explode. I've make this lots of times never had a problem with it exploding just made sure water always covers can. Makes the best caramel you ever tasted.

      @@daydreamera8558 at a simmer, it is you can't rush it. Boiling the can will cause it to explode. If, you are unsure of the difference between a simmer and a boil, don't do it.

    I'm wondering if a vanilla wafer pie crust painted with a white chocolate shell like Dolci Frutta then using the knox blocks recipe with Lemon Jello and some unflavored jello and then a simple whipped topping or whipped cream topping would work as well but be a little simpler to do. It would probably be sweeter but we could use some sugar free jello.

    about the transparency and shine thing: as humans we are actually attracted to things that shine and glitter like sparkles and whatnot because they remind us of water!! i assume that could be a reason why transparency is also interesting but i would make a guess that in cases like this pie we are used to having more visual feedback when it’s not clear than we get when the pie is clear.

    The pie looked very interesting, but can I suggest what I know as a Shaker Lemon Pie?
    My base version (simplified from the original):
    Pie shell and cover (unbaked)
    Filling:
    Two large lemons
    two cups sugar
    4 eggs (preferably true free-range for both taste and colour)
    seed and pith the lemons (that is, remove the white column down the centre) and trim off the ends
    toss in blender with remaining ingredients
    blend until smooth (plus a little bit--you want to make sure to blend up the lemons)
    If necessary (old lemons or small lemons) you can add a little lemon juice to make the custard wet enough
    Pour into shell, cover, and bake at 350° F or 175°C until the shell is nicely browned
    cool and eat
    For the improved version, you zest the lemons and then remove both the inner and outer pith. Proceed as before.
    More lemony, less bitter. But the custard is elegant--three ingredients for either version. It is the simplest and most lemony pie I've ever made. My MIL insists I make it for her regularly. at the ducky moss (I have no idea how to spell that)!
    Love the channel, BTW. The Significant Other and myself sit down to watch it whenever new content comes up.

    I personally think I'd use just one package of gelatin, to get a softer middle more like a normal lemon meringue pie, but I definitley want to try making this.

    I suggest that you get a propane torch if you're gonna be using that for food because propane is a cleaner burning fuel. You may be able to taste the gas on your food if you use butane.

    I wonder if you could use less gelatine or use the same gelatin used in raindrop cake to make a softer jelly filling that will still hold its shape. I also would have used a one to one ratio of citric acid and lemon extract for the filling because too much acid makes extracts taste funky... but that might be a personal preference.

    Interesting but since I hate gelatin (and Jello) I would likely never want to try this. I've made lemon meringue pie before and prefer a filling that's closer to lemon curd in texture. And yes, juice from real lemons. It was fun to watch though, as always! :)

    It looks cool, but, I don't think I'm making it. An easier version would just use lemon Jello with some added lemon flavoring, wouldn't it? Emmy, did you ever make a pie crust with solid shortening like Crisco? To me, a shortening pie crusts flavor is so old fashioned and homey it's not as rich as it is when made with butter, but, it does bring out the flavor of the filling and also has a wonderful taste in itself. I save the butter for baking cookies. But maybe that's just me.

    It's a jello pie. You dont need the crust or meringue. Jello and whipped cream will do. It's a pretty pie tho.

    Just goes to show everything really does come back again. When I was a young child (early 60s) we had a neighbour who made Jello pie. It was transparent to show the raspberries floating in the very firm Jello. I don't know how she made it but, looking back, I suspect she used 2 boxes of Jello but only as much water as for one so that the filling was really firm. I don't really remember how it tasted but looking at the berries floating in the pie was fascinating to my (probably) 6 year old eyes.

      Probably one box of Jello with an added packet of gelatin. Two boxes of Jello with half the water would be very dark and overpowering.
