I work full time so I do most of my food preservation on the weekend. This weekend, we put up 15 pints of Black beans, 7 pints of purple hull peas, Started some14 day pickles, made fire cider.Started 30 lbs of sauercraut. We are freezing 20 ears of corn whole. We will blanch and freeze the rest. 60 ears total. I purchased a 1/2 bushel of roasted green chilis. We are canning and freezing them. I started homemade vanilla. Used the corn silks in a tincture. And plan to finish chow chow before I call it a night. Two very full days of food prep for my pantry.
Jessica this is just a little hint with the onions. Chelsea from Little Mountain Ranch uses swimming goggles to cover her eyes when she is processing food with large amounts of onions. I have tried it and it works. It really lessens the tears. My grandchildren love the stylist look Nana has when wearing these goggles. No challenge this year due to moving from Arizona to Idaho but I am trying to do what I can without a garden. Love your vlog You and your family just warms my heart. Thank you❤
Sometimes I can get bananas for half the price, because they are ripe like those and also for making smoothies. But I freeze them With the Skin on, as they are impeccable as soon as they come out of the freezer (only the skin seems almost black), just cut them into 4 parts, remove the skin and the smoothie is like made with fresh, very white bananas. When I froze bananas without the peel, the banana didn't stay as white and so well preserved. Half a price or even less, every little bit counts :) With the skin, you don't even need to remove the air from the packaging or to seal the bag. Greetings from Portugal, I speak Portuguese, the reason for my bad written English ;)
As they are ripe, when I bring them from the store, I separate them at the top with a scissors so they don't lose any skin, keeping all the skin, it's the best protection and then I can remove as many bananas as I need without them ever being stuck together.
I don't pressure myself to do something every day. Just the two of us. This week I did tomato soup, dried herbs, and harvested potatoes. Your videos are the best and I am always amazed at your calm demeanor, work ethic and organization. A true inspiration.

I just recently discovered your posts and I've been trying to catch up on all of your videos. My parents both lived through the depression and WWII. I'm 73 now. I can't ever remember a time when we didn't have a garden, as did most of our neighbors. We all traded and shared our produce. Once a week the women would take turns hosting a canning party. They would all bring their canners, tools and the produce they had leftover from their own canning projects. Even us kids would snap beans, wash the produce, shell peas. After a day of canning the jars of goodness were divided, with the hostess getting a few jars more to help cover the cost of running that gas stove all day. It was a good time for the ladies to "gossip" or share recipes recipes and for us kids to play. But I learned about food preservation from those ladies. I will say that I love the Every Bit Matters challenge and have decided to join in. I'm a few days behind but I'm trying to make up for lost time. Today I canned 4 pints of homemade marinara and 6 pints of pork and beans. I've tested and juiced 3#if lemons and 3#of limes. I frize the juice in ice cube trays, dried the zest and put leftover stuff in a jar of vinegar to make a cleaner. Tomorrow I'm going to dehydrate some potato slices and make a scalloped potato mix. I've made a list of projects I want to do with what I gave in my freezer and pantry. You have so inspired me. Thank you! ❤

But I have found out it is gonna sound funny very funny but I got me a pair of goggles that the kids used to swim with just a cheap pair to put over my eyes and I guarantee you you won’t cry. I dried herbs almost every day. I started some peach vinegar with the left over skins and peach pits. Not much but more for the shelves. I also canned some green beans. Thanks for the challenge. It keeps me motivated to get things done.

Grandma’s Best Ever Rhubarb Cake (or muffins) Set aside 1 1/2 cup rhubarb 1/2 cup sugar 1 tbl cinnamon 1/2 cup shortening 1 1/2 cup brown sugar 1 egg 1 tsp vanilla with love 2 cup flour 1 tsp baking soda 1/2 tsp salt 1 cup sour milk 11:2911:3611:3611:46 ( milk plus a tbl vinegar) Mix above and place into a greased/floured baking dish. (Or two muffin 12 pan) Sprinkle/Add the rhubarb/sugar/cinnamon mix on top . Bake at 350°. 35-45 min Cake finished when tooth pick comes out clean! Let cool and top with vanilla ice cream or whipped cream!!!

I'm working alongside you. My week started with working with potatoes. Made hashbrowns and mashed for freezing. Pulled out some frozen squash and made mini breads(4) froze them. Saved some bean seeds. Dehydrated basil and oregano.

You don’t even need the ‘sure’ part for the sauce, only if you’re talking about the county. You’ve got the pronunciation right though, it’s sure not shire.
Pro tip my mama taught me! Use basic plastic (sunglasses 👓 style) safety goggles!!! It helps create a vapor barrier so those darn onion oils don't get too close to our eyeballs! It helps so much!!! Also I find if I do it in front of an open 🪟 window the gentle breeze helps circulate the onion odor and seems to dilute or at least aid in a tear free experience!!!
If I heard you right, you said you would process the chicken chili for 75 minutes for quarts. It has always been my understanding that it would be 75 minutes for pints and 90 minutes for quarts for any and all meats. Be safe out there ! And thanks for the inspiration for the 30 days of food storage.
National Center for Home Food Preservation says soups only need to be processed for 75 minutes for quarts, even if they contain meat, unless it's seafood- based, which is 100 minutes. It's only full jars of non-seafood meat that need 90 minutes.

Was glad to have you say that about protein at the end of your video. My everyday breakfast is oatmeal with fruit. Most traditional breakfast foods make me nauseous in the morning. So many people lecture me about the lack of protein! Maybe this will inspire me to actually can something tonight - nothing major, but our first apples are ripe and I should make/can applesauce.

Really enjoyed the video. Worchestershire sauce is definitely something most people outside England uk struggle with saying. Im from England so happy to help with pronouncing it for you especially as your videos have helped me with so many things. It’s easier if you break it down as some parts of the word are pronounced slightly different to how it is spelt. Once you can say each part as it is pronounced then you say them all together as one word il spell it as it is pronounced as that makes it much easier wus stir shy er Wusstirshyer Worchestershire sauce is amazing it goes great in pasta bolognese, lasagna, sloppy joes, mince and onion, meat pies, stir fry’s and with chicken and pork too Iv been preserving lots of fruit rhubarb and tomatoes for the challenge Looking forward to next weeks video Wish you and your family lots of good health and happiness
Might I suggest to help your eyes during chopping: Wear goggles of some kind. Those used in winter or for swimming. Either will work. Also, rinse them in cold water & while you are processing them, keep your mouth closed. It really does help! Love your weekly videos!!
Hi! Bless your heart about your sensitivity to chopped onions. Have you tried using swimming goggles to protect your eyes while you deal with onions? Yes, your husband and kids will probably razz you mercilessly if they are anything like mine, but it will make your job go so much easier and more quickly. Just a suggestion.
I enjoy your narrated format. Interesting point about the sugar. The same people ho may complain about use of sugar use all kinds of chemicals in processed foods. The additives and chemicals are so much worse than a bit of pure sugar. I also use a mantra of" always eat sugar or sweetener with fiber and fat. That evens your sugar spikes. I am 70 this year and I have never had sugar issues nor have my family. I AM becoming more and more sensitive to chemicals in food.
I am a wimp so I add mild banana peppers to my white chicken chili instead of jalapeno's.My grandson asks for this soup for his birthday, and that is in August.

Wonderful preservation projects. I like the onion soup and will try that! I usually keep my fresh grown pinions for fresh eating until they are gone. I canned green beans, corn, tomato sauce, sloppy joe sauce, garden vegetable soup, dehydrated some cherry tomatoes and onions and put some basil in the freezer since last Saturday. I still have to can some potatoes (I bought a 50# bag for $15).

I have never heard of using corn silk for teas - very interesting! I am growing both sweet corn and corn to grind, so I will have to look into if I can save both varieties and what benefits it has. Thanks for the idea - I’ve never heard of this!

Chewing mint gum helps. Also, keep onions in cold water while you are preparing them for the food processor. These two hints may help!
I hold bunches of toothpicks in my mouth while cutting hot onions (and run a small fan on the counter aimed AWAY from me). Works!
I've been putting my onions in the freezer for 20 minutes before cutting. That works for me. No more tears 😢

I take a bag full of onions & my food processor into my back porch & zip out the whole bag in a few minutes & no tears!

We make many meatless soup bases, then use whatever left over proteins or canned protein we are feeling that day! All about absorbing all leftovers!

Was glad to have you say that about protein at the end of your video. My everyday breakfast is oatmeal with fruit. Most traditional breakfast foods make me nauseous in the morning. So many people lecture me about the lack of protein!

❤❤I've missed 2 days due to sickness but I doubled up on the next 2 days. So pleased with what I have picked, bought and prepped. My first day I spent over 3 hours organizing and inventorying my pantry. Feels so good
Last Sat. my mom and I put 2 bushels of corn in the freezer. This weekend mom came and help can 1 bushel of green beans, and used 1.5 bushels of tomatoes and made 105 pints of salsa. Monday after work is potatoes. Tuesday French Onion Soup. Hope you had a great week.

Really enjoyed the video. Worchestershire sauce is definitely something most people outside England uk struggle with saying. Im from England so happy to help with pronouncing it for you especially as your videos have helped me with so many things.
It’s easier if you break it down as some parts of the word are pronounced slightly different to how it is spelt. Once you can say each part as it is pronounced then you say them all together as one word il spell it as it is pronounced as that makes it much easier

Might I suggest to help your eyes during chopping: Wear goggles of some kind. Those used in winter or for swimming. Either will work. Also, rinse them in cold water & while you are processing them, keep your mouth closed. It really does help! Love your weekly videos!!
I fill my mouth with water and that really helps but only for 5 minuts, if you have to chop more, goggles are the perfect solution!
Contacts are very helpful when cutting onions 😂 most of the time I don’t cry when cutting them!
I use the water trick, I just run my cold water and open my eyes wide and just near to the faucet! takes the pain away immediately for me!
Hi! Bless your heart about your sensitivity to chopped onions. Have you tried using swimming goggles to protect your eyes while you deal with onions? Yes, your husband and kids will probably razz you mercilessly if they are anything like mine, but it will make your job go so much easier and more quickly. Just a suggestion.
My dear one thing that will help you not to cry when peeling onions is the sea mask for the eyes , it's not a joke what I'm saying, it works.

I enjoy your narrated format. Interesting point about the sugar. The same people ho may complain about use of sugar use all kinds of chemicals in processed foods. The additives and chemicals are so much worse than a bit of pure sugar. I also use a mantra of" always eat sugar or sweetener with fiber and fat. That evens your sugar spikes. I am 70 this year and I have never had sugar issues nor have my family. I AM becoming more and more sensitive to chemicals in food.

I am a wimp so I add mild banana peppers to my white chicken chili instead of jalapeno's.My grandson asks for this soup for his birthday, and that is in August.

We made corn cob broth one year. There were so many ears, that year and the broth turned out great. I used it as I would a veggie broth.

Wonderful preservation projects. I like the onion soup and will try that! I usually keep my fresh grown pinions for fresh eating until they are gone. But you are so right, this a great use of the little ones. I’ve started the challenge and will have to go mid-august to mod-September as my crops are just coming in. Thanks for the inspiration!
I canned green beans, corn, tomato sauce, sloppy joe sauce, garden vegetable soup, dehydrated some cherry tomatoes and onions and put some basil in the freezer since last Saturday. I still have to can some potatoes (I bought a 50# bag for $15).
This French onion soup is so much easier than other recipes!! Can’t wait to try it

One hack for cutting onions with less crying- put a piece of wett papper towel on your cutting board and cut the onion on top of that! :)

I have never heard of using corn silk for teas - very interesting! I am growing both sweet corn and corn to grind, so I will have to look into if I can save both varieties and what benefits it has. Thanks for the idea - I’ve never heard of this!
