I just finally took my raspberry pi 3 off my desk after months of it sitting there and built one using Emulga 32gb RecalBox image but arcadepunks.com is a great source for my future build!
I wish there was a way to make mario kart (or any split screen) not split screen and show up full on each player. Edit - surely to goodness there is..?

Why did you switch to vga?
This si only a guess, but I'd think it's because the older 4:3 monitors wouldn't have HDMI.
