Don't even worry about an AE-1. There's a lot of SLRs out there and the AE-1 is sort of currently popular, driving the price up. Try a Pentax K-1000, a Olympus om-1, or a Minolta x-700. Arguably better for cheaper. Honestly any manual SLR will do. They all do the same thing. Make sure the lenses are nice and they all equal each other in visual performance. More about personal preference which you can only develop from having a camera and making decisions about t
People really like their AE-1s which is cool but they're not better than an Olympus OM2n or Pentax Super A (for example) and some of these are easier to get good/cheap.

I would have used the incident meter to get a reading of the full brightness and then used my hand to cast a shadow over it for the shadow exposure. There wouldn't be a huge exposure difference in fog, so I would just go with the shadow exposure, plus maybe a half stop?

The best way to spot meter is to view all colors as tones of grey then meter off the color that closest matches "middle grey". Things like grass and blue skies are good starting points because they're usually close to middle grey.
