Very informative video, I am just in wine making hobby made Rice, Pineapple, mango and Banana wines 1 gallon each , all came out excellent haven't use any of the chemical u shown just to keep it organic. I wanted to age it but after 1 month my patience gave up n ended up with empty bottles 😂😂 . Anyway end of the day home brewing is very inexpensive n we can enjoy many flavourful wines only you have to work hard for initial n final days of the process. I am moving the wine into a clean carboy this evening and straining it through cheese cloth as it goes into the carboy. Will airlock and wait until bubbles stop. Again I appreciate your help and look forward to sampling the finished product.
I started the same way , too many muscadines to know what to do with so,,, I made wine. That was 5 years ago. I don't have the amount of muscadines as you do but I'm able to make about 5 gallons of wine a year. What a great gift from nature and the Man above! Great video!

Hey there cousin. Thanks for watching. Your dad and my dad would like it I do believe. Once I visited dad and he had about 4 large carboys on the bench out in the shed working off, and only one was full. The others had different amounts missing. I asked why they were not all full and working, and he answered he had been tasting each one to check on them. lol Sounds just like them. I can imagine Uncle Jimmy stopping by on occasion too. lol
I’ve been making wine past Five years with my Concord grapes grown in my yard, love your video, always learning something new or something I forget to do. Currently starting a 5 gallon batch of grape wine. I also make grape juice and jelly, love to give away to family and friends. Thanks for sharing and hope your kitchen turns out great. Tony

I still have over half of that wine. I give most of it away to friends visiting. I do like it but the wife thought 12.0 was too strong for her. She likes the 10.0 box wine. Go figure. I'm going to make this! I've been brewing beer for a bit, but now I have 30 lbs. of scuppernongs (Bronze Muscadines) to turn into wine. Your method is - by far - the best I've seen. One small edit in your posted recipe: the third ingredient should be 10-12 lbs of sugar, not grapes. Thank you so very much for sharing!

At 8:30 you put in 1-1/2 tsp of Pot. Met. Where did you find the information on how much of this stuff to add? I really do want to protect my wine with this, but I can't find very much info on the quantities to use. The supplier, LD Carlson won't even suggest a quantity to me either, and most internet sources vary from one source to another. In fact, the quantity you are using is far more than I have seen thus far. I really want to protect my wine, but I'm afraid of ruining it too. Thanks.
Hey Jim, when I did that I had forgotton what it was suppose to be. It should've been either 6 crushed campden tablets (1 per gal) or 1/2 tsp of potassium metabi. According to what I can find, if you use the powder it's 1/16 tsp per gal, so half a tsp would have been good. However, the wine was not damaged or bitter at all. The best I've done so far. This is so awesome. I have both of those varieties of grapes, but not the massive amount you have. I think I can fill a five gallon bucket with the white grapes, and definitely with the Cowarts. I'll be trying this all for the first time. Can you recommend what essential equipment I will need? I don't know if there is a good starter kit for wine making or a list on some website out there you could point me to, but any advice would be appreciated. Just subscribed too, nice to meet you ;-)

Yes sir, I took a reading and it was about 1.030 but didn’t see it working anymore. It was in primary for 6 days and today it was thick when I went to move it over to carboy so I strained it through a extra fine net which took a bunch of thick dead yeast and was afraid I may have robed something from it to continue to secondary. It doesn’t taste bad but concerns me that it’s just seems to be laying flat.

With a different gravity reading I didn't have to add as much sugar. I am racking in the carboy today. QUESTION: By reading your instructions in the description, should I hold off on the betonite the 1 stage of secondary fermentation? Thanks. And great job. Mr. Phil I wanted to let you know that I really appreciate the very informative videos. I am making my first batch and have a few questions. First I am using 30 lbs of muscadines and used 12 lbs of sugar and 4.5 gallons of non- chlorinated water, I have a six gallon carboy and don’t think it will be completely full at my secondary fermentation will this be an issue? Hey Clint. You can add some water to top off the carboy. I have used a cheap bottle of sweet red wine too. Degass about 2 weeks after secondary fermentation or 2nd rack. Long handle wine spoon, or drill with degassing attachment. Below is what I did. Each time can have it's own challenges. On 9/4/2017 Monday Wine recipe 1/2 bushel grapes per 5 gal wine Picked 3 full 5 gallon buckets 1 bushel= 50 lbs. 1/2 bushel= 25 lbs. (1) 5 gal bucket= 20 lbs. Need 50 lbs. Grapes for 2 Carboys. I had 60 I used 3 containers for the must (2) 5 gal buckets and (1) 6.5 gal Big Mouth Jug Crushed all grapes divid btw 3 containers Added to each container 2 1/2 tsp yeast nutrient 2 1/2 tsp pectic enzyme 5 crushed campden tablets 9 lbs sugar betw the 2 buckets 9 lbs sugar Big Mouth Bubbler The hydrometer rdg on buckets 1.110 The hydrometer rdg on Big Mouth 1.095 On 9/5/2017 Tuesday I pitched the yeast in each container Drew off 1/2 cup of sugared juice Mixed in 1 packet of yeast stirred good Added to each container. Wait until hydrometer rdg is between 1.030 & 1.045 then squeeze pulp and rack to carboy. Thursday 9/7/17 Came home from beach, found Big Bubler 6.5 gal container spilling over due to fermentation had been causing juice to rise. Had filled to full. I pourd this into (2) 5 gal food grade buckets. I had not added any water earlier, so I added 1 gallon to each bucket along with a cup of sugar disolved. The S.G. at this point before adding water or more sugar was 1.050. It began at 1.095 in 2 buckets, and 1.110 in the Big Bubbler. After adding 1 gal of water, and 1 cup sugar to each buckets, the S.G. in all 4 buckets was 1.060. I believe this wine will end up at 13% ABV. Calculated after fermentation to ne 12.642 % On Sunday September 10, the S.G. read 1.010 on all 4 buckets, and I squeezed the pulp from the juice, and transferred the wine from the (4) 5 gal buckets into (2) 6.5 gal Carboys. I installed airlockes. There were 2 gal remaining which was put into (2) 1 gal wine bottles with air locks. 9/28/2017 Thursday - Fermentation ended Racked one carboy of purple wine to a Conical Fast Fermenter. Added 5 crushed campden tablets 2 tsp bentonite 1/2 tsp per gal calcium carbonate lower acid 1 handful netted bag oak chips Racked second carboy to a clean carboy Added 5 crushed campden tablets 2 tsp bentonite 1/2 tsp per gal calcium carbonate lower acid 1 handful netted bag oak chips S.G. Reading - 0.997 To calculate alcohol percent or ABV Starting gravity = 1.095 Subtract finishing gravity = 0.997 Equals 0.098 Multiply x constant of 129 Equals 12.642 On 10/13/2017. Friday Removed net bag oak chips and degassed Fast Fermenter with electric drill. Racked yeast ball On Monday 10/23/2017 Racked Carboy Added 5 crushed Campden Tablets 3 tsp potassium sorbate 2- 12 oz Old Orchard white grape 100% juice to back sweeten wine.
I am fortunate enough to live in california where i have the ability to grow pretty much any grapes i want. I have some Vinifera vines. Whats great about my area is that its warm and sunny but not hot during the day, and cool at night really helps to balance the acidity in grapes. I have the following grapes Malbec Cabernet Franc Alicante Bouschet Merlot Barbera Carmenere Nebbiolo Fiano Picpoul Blanc Picardan

Hi Phil. I have been following your videos for last 3 years since I started making wine, But this last batch, I do not know what i did wrong. It had been in the prinmary fermenter for 6 days. wild muscadine. My hydrometer broke shortly after i started the primary fermentation. and new one is not here yet. I transferred to secondary fermenter on day 6 without knowing the SG. It has been fizzing away. When I did the rack, I added campden and it immediately turned pink, a sick pink. Did I add the campden at the wrong time, kiling all of the yeast? there is absolutely no bubbling in my air lock. Makes me sick because it was some of the prettiest juice ive ever had come out. HELP

Ya gotta ‘goose’ it so it’ll have that ‘kick’. Lol. Have 3 demijons, just finished primary fermentation. Forgot to add pectic enzyme. Hope that has no major effect on the end product.

Hello sir, one last question for you. I moved the wine over to the clean carboy, filtering it through a net catching sediment and dead yeast. After applying the airlock I have no bubbles? Again I have just finished the primary fermentation. Any ideas?
Did you take a SG reading with your hydrometer when you began, then move it over to the secondary at around 1.035. If it stayed in the primary container until it completely stopped fermenting (all sugars had turned to alchohol and SG reading on the hydrometer was 0 or .997) then there may not be anymore gas to escape thru the airlock. How long was it in the primary bucket? It's not going to really matter. You may see a bubble trickle up once in a while. But just continue on as normal. If you didn't take a reading when you transferred it, you should just to verify. It should read 0 or 0.997 or somewhere near that.
Mr. Phil, We are in the process of making our first fruit wine. We have only done the kits, before now. How long "could" fermentation last? After 7 days, we did the first rack. It has been 7 days and it is still producing bubbles. Should we just continue to wait? Any advice would be appreciated. We have enjoyed your videos and learned so much from them. Yes, just wait on it. The secondary fermentation can take a little more time. I'm glad you liked my attempt to video my little wine making. Did you do buckets first, then go over to a carboy?
@@brettderouen8180 Okay good. Just let it keep working off. It will eventually stop. Each time you rack, add the crushed campden tablets (Potassium Metabisulphite) to keep it clean. Years ago when dad was still living, he made some wine. I went to visit one weekend, and took me to his shed to see his wine. He had 4 or 5 carboys up on a work bench, and all had different amounts of wine inside. One half full, one 3/4 full, and one 1/4 full. I asked why aren't these carboys full? He says oh they were. I've been sampling them to see how it was coming along. LOL Good Luck with yours. Thanks-phil

When I started to watch the first one I thought of your dad right away how you talked about him, I imagine he would have been right there with you making the wine and wanting to test the final product after all the time and energy put into making it. This also reminds me of my mom making chokecherry jelly, lots of labor and sugar. I wonder if there is a smoked cheese that would go with that wine there Phil? Very good to drink small amounts. I like giving it away to people who appreciate what it is and know the labor of love that goes into it. Dad woulda been right there in the mix. He had grape vines, and made wine too. Once I went to see him and saw 5 carboys of newly racked wine at the early stage. One was full, another half full, and the others somewhere in between. I knew they were all supposed to be full (at this stage in the process) and asked where is the wine?? He says, well I've been sampling on it a little bit. Hey there Stefan. I'm very glad to hear you appreciate and liked the video. It takes some doing and patience to make a video and try to get the right info into it. I watched a lot of homemade wine videos before making this run and wanted to give as much detailed info as I could so someone could halfway follow it. lol My shoulder still hurts from falling backwards and striking it against the door (when the chair leg support broke). Never has healed back. Hard to raise that arm without pain. It wasn't from drinking wine that I fell out of the chair like many like to say. lol Anyway, For me, I can take the wine at 12.5 ABV, but the wife likes it down around 10. This particular run was 4 seperate containers, 2 carboys and 2 fast fermenters. You always subject to run into issues during making it. Make sure you aren't going off during the primary fermentation like we did. We already had beach plans, and when we got back 4 days later, the wine had bubbled out of the bucket , filled up the overflow container. After cleaning it up, I didn't know what I had. I ended up adding more sugar and yeast starter and began again only in that container. In the end, the abv was very high, after going thru 2 fermentations. The highest you can get wine is about 18-19. That particualar batch was high. Drink 2 glasses of that and you will know it. lol The rest of it was at about 12.5 which is a nice stout wine. Of couse you can see I back sweetened it at the end of the process. We don't like dry wine. It is similar to sweet reds you can get at the grocery store. I haven't ventured out to anything else since we have plenty of free grapes. You can order the wine kits of the good stuff from California, or like my TH-cam buddy Larry order very expensive grape from Italy that has so much sugar in the grape you don't need to add sugar. That is really something. I wish you much success with your wine project. Thanks for the nice comments. I still have a good bit of that run boxed up (aging) lol. May have to break open a bottle tomorrow evening.

I’ve been making wine past Five years with my Concord grapes grown in my yard, love your video, always learning something new or something I forget to do. Currently starting a 5 gallon batch of grape wine. I also make grape juice and jelly, love to give away to family and friends.

I'm going to make this! I've been brewing beer for a bit, but now I have 30 lbs. of scuppernongs (Bronze Muscadines) to turn into wine. Your method is - by far - the best I've seen. One small edit in your posted recipe: the third ingredient should be 10-12 lbs of sugar, not grapes. Thank you so very much for sharing!

When you create the bentonite slurry, it is best to use a wooden spoon, to avoid the possibility that metals in the spoon may leach into the mixture.

At 8:30 you put in 1-1/2 tsp of Pot. Met. Where did you find the information on how much of this stuff to add? I really do want to protect my wine with this, but I can't find very much info on the quantities to use. The supplier, LD Carlson won't even suggest a quantity to me either, and most internet sources vary from one source to another. In fact, the quantity you are using is far more than I have seen thus far. I really want to protect my wine, but I'm afraid of ruining it too. Thanks.
Hey Jim, when I did that I had forgotton what it was suppose to be. It should've been either 6 crushed campden tablets (1 per gal) or 1/2 tsp of potassium metabi. According to what I can find, if you use the powder it's 1/16 tsp per gal, so half a tsp would have been good. However, the wine was not damaged or bitter at all. The best I've done so far. This is so awesome. I have both of those varieties of grapes, but not the massive amount you have. I think I can fill a five gallon bucket with the white grapes, and definitely with the Cowarts. I'll be trying this all for the first time. Can you recommend what essential equipment I will need? I don't know if there is a good starter kit for wine making or a list on some website out there you could point me to, but any advice would be appreciated. Just subscribed too, nice to meet you ;-)

Yes sir, I took a reading and it was about 1.030 but didn’t see it working anymore. It was in primary for 6 days and today it was thick when I went to move it over to carboy so I strained it through a extra fine net which took a bunch of thick dead yeast and was afraid I may have robed something from it to continue to secondary. It doesn’t taste bad but concerns me that it’s just seems to be laying flat.
Don't worry about it. Just keep an eye on it for a day or two. Did you add some crushed campden tablets (5 or 6) to keep it clean?
Were can I get the wild orchard sweetener? Or is it just regular juice?

With a different gravity reading I didn't have to add as much sugar. I am racking in the carboy today. QUESTION: By reading your instructions in the description, should I hold off on the betonite the 1 stage of secondary fermentation? Thanks. And great job. Mr. Phil I wanted to let you know that I really appreciate the very informative videos. I am making my first batch and have a few questions. First I am using 30 lbs of muscadines and used 12 lbs of sugar and 4.5 gallons of non- chlorinated water, I have a six gallon carboy and don’t think it will be completely full at my secondary fermentation will this be an issue? Secondly when do I degas the wine? Thanks for your help.

Hey Clint. You can add some water to top off the carboy. I have used a cheap bottle of sweet red wine too. Degass about 2 weeks after secondary fermentation or 2nd rack. Long handle wine spoon, or drill with degassing attachment. Below is what I did. Each time can have it's own challenges.
On 9/4/2017 Monday
Wine recipe 1/2 bushel grapes per 5 gal wine
Picked 3 full 5 gallon buckets
1 bushel= 50 lbs.
1/2 bushel= 25 lbs.
(1) 5 gal bucket= 20 lbs.
Need 50 lbs. Grapes for 2 Carboys. I had 60
I used 3 containers for the must
(2) 5 gal buckets and (1) 6.5 gal Big Mouth Jug
Crushed all grapes divid btw 3 containers
Added to each container
2 1/2 tsp yeast nutrient
2 1/2 tsp pectic enzyme
5 crushed campden tablets
9 lbs sugar betw the 2 buckets
9 lbs sugar Big Mouth Bubbler
The hydrometer rdg on buckets 1.110
The hydrometer rdg on Big Mouth 1.095
On 9/5/2017 Tuesday
I pitched the yeast in each container
Drew off 1/2 cup of sugared juice
Mixed in 1 packet of yeast stirred good
Added to each container.
Wait until hydrometer rdg is between
1.030 & 1.045 then squeeze pulp and rack to carboy.
Thursday 9/7/17
Came home from beach, found Big Bubler 6.5 gal container spilling over due to fermentation had been causing juice to rise. Had filled to full. I pourd this into (2) 5 gal food grade buckets.
I had not added any water earlier, so I added 1 gallon to each bucket along with a cup of sugar disolved.
The S.G. at this point before adding water or more sugar was 1.050.
It began at 1.095 in 2 buckets, and 1.110 in the Big Bubbler.
After adding 1 gal of water, and 1 cup sugar to each buckets, the S.G. in all 4 buckets was 1.060.
I believe this wine will end up at 13% ABV.
Calculated after fermentation to ne 12.642 %
On Sunday September 10, the S.G. read 1.010 on all 4 buckets, and I squeezed the pulp from the juice, and transferred the wine from the (4) 5 gal buckets into (2) 6.5 gal Carboys. I installed airlockes. There were 2 gal remaining which was put into (2) 1 gal wine bottles with air locks.
9/28/2017 Thursday - Fermentation ended
Racked one carboy of purple wine to a Conical
Fast Fermenter. Added
5 crushed campden tablets
2 tsp bentonite
1/2 tsp per gal calcium carbonate lower acid
1 handful netted bag oak chips
Racked second carboy to a clean carboy
Added
5 crushed campden tablets
2 tsp bentonite
1/2 tsp per gal calcium carbonate lower acid
1 handful netted bag oak chips
S.G. Reading - 0.997
To calculate alcohol percent or ABV
Starting gravity = 1.095
Subtract finishing gravity = 0.997
Equals 0.098
Multiply x constant of 129
Equals 12.642

Removed net bag oak chips and degassed
Fast Fermenter with electric drill.
Racked yeast ball

Racked Carboy Added

Are the corks wet or are you supposed to dry?
I am fortunate enough to live in california where i have the ability to grow pretty much any grapes i want. I have some Vinifera vines. Whats great about my area is that its warm and sunny but not hot during the day, and cool at night really helps to balance the acidity in grapes.

Hi Phil. I have been following your videos for last 3 years since I started making wine, But this last batch, I do not know what i did wrong. It had been in the prinmary fermenter for 6 days. wild muscadine. My hydrometer broke shortly after i started the primary fermentation. and new one is not here yet. I transferred to secondary fermenter on day 6 without knowing the SG. It has been fizzing away. When I did the rack, I added campden and it immediately turned pink, a sick pink. Did I add the campden at the wrong time, kiling all of the yeast? there is absolutely no bubbling in my air lock. Makes me sick because it was some of the prettiest juice ive ever had come out. HELP

Ya gotta ‘goose’ it so it’ll have that ‘kick’. Lol. Have 3 demijons, just finished primary fermentation. Forgot to add pectic enzyme. Hope that has no major effect on the end product.

Hello sir, one last question for you. I moved the wine over to the clean carboy, filtering it through a net catching sediment and dead yeast. After applying the airlock I have no bubbles? Again I have just finished the primary fermentation. Any ideas?
Did you take a SG reading with your hydrometer when you began, then move it over to the secondary at around 1.035. If it stayed in the primary container until it completely stopped fermenting (all sugars had turned to alchohol and SG reading on the hydrometer was 0 or .997) then there may not be anymore gas to escape thru the airlock. How long was it in the primary bucket? It's not going to really matter. You may see a bubble trickle up once in a while. But just continue on as normal. If you didn't take a reading when you transferred it, you should just to verify. It should read 0 or 0.997 or somewhere near that.
Mr. Phil, We are in the process of making our first fruit wine. We have only done the kits, before now. How long "could" fermentation last? After 7 days, we did the first rack. It has been 7 days and it is still producing bubbles. Should we just continue to wait? Any advice would be appreciated. We have enjoyed your videos and learned so much from them. Yes, just wait on it. The secondary fermentation can take a little more time. I'm glad you liked my attempt to video my little wine making. Did you do buckets first, then go over to a carboy?

Okay good. Just let it keep working off. It will eventually stop. Each time you rack, add the crushed campden tablets (Potassium Metabisulphite) to keep it clean. Years ago when dad was still living, he made some wine. I went to visit one weekend, and took me to his shed to see his wine. He had 4 or 5 carboys up on a work bench, and all had different amounts of wine inside. One half full, one 3/4 full, and one 1/4 full. I asked why aren't these carboys full? He says oh they were. I've been sampling them to see how it was coming along. LOL Good Luck with yours. Thanks-phil

Great couple videos showing a labor of love like the gardening. When I started to watch the first one I thought of your dad right away how you talked about him, I imagine he would have been right there with you making the wine and wanting to test the final product after all the time and energy put into making it.
This also reminds me of my mom making chokecherry jelly, lots of labor and sugar.
I wonder if there is a smoked cheese that would go with that wine there Phil? Or anything else that you like to pair with it. Jay

Hey Jay. Yes a project like this is definitely (to me) like a hobby and a novelty. I just like to see something so raw turn into something so clean and sparkling. Very good to drink small amounts. I like giving it away to people who appreciate what it is and know the labor of love that goes into it. Dad woulda been right there in the mix. He had grape vines, and made wine too. Once I went to see him and saw 5 carboys of newly racked wine at the early stage. One was full, another half full, and the others somewhere in between. I knew they were all supposed to be full (at this stage in the process) and asked where is the wine?? He says, well I've been sampling on it a little bit. Hey there Stefan. I'm very glad to hear you appreciate and liked the video. It takes some doing and patience to make a video and try to get the right info into it. I watched a lot of homemade wine videos before making this run and wanted to give as much detailed info as I could so someone could halfway follow it. lol My shoulder still hurts from falling backwards and striking it against the door (when the chair leg support broke). Never has healed back. Hard to raise that arm without pain. It wasn't from drinking wine that I fell out of the chair like many like to say. lol Anyway, For me, I can take the wine at 12.5 ABV, but the wife likes it down around 10. This particular run was 4 seperate containers, 2 carboys and 2 fast fermenters. You always subject to run into issues during making it. Make sure you aren't going off during the primary fermentation like we did. We already had beach plans, and when we got back 4 days later, the wine had bubbled out of the bucket , filled up the overflow container. After cleaning it up, I didn't know what I had. I ended up adding more sugar and yeast starter and began again only in that container. In the end, the abv was very high, after going thru 2 fermentations. The highest you can get wine is about 18-19. That particualar batch was high. Drink 2 glasses of that and you will know it. lol The rest of it was at about 12.5 which is a nice stout wine. Of couse you can see I back sweetened it at the end of the process. We don't like dry wine. It is similar to sweet reds you can get at the grocery store. I haven't ventured out to anything else since we have plenty of free grapes. You can order the wine kits of the good stuff from California, or like my TH-cam buddy Larry order very expensive grape from Italy that has so much sugar in the grape you don't need to add sugar. That is really something. I wish you much success with your wine project. Thanks for the nice comments. I still have a good bit of that run boxed up (aging) lol. May have to break open a bottle tomorrow evening.
