    Hi friends, how are you? Today I offer you one of the Easter sweets typical of the Apulian tradition: the Scarcelle. They are large biscuits prepared with a shortcrust pastry without butter, made with flour, eggs, sugar, milk, olive oil, and flavored with lemon zest (ammonia is added for sweets to give more fragrance to the dough but you can replace it with baking powder). Like the Sicilian cuddura cu l'ova, the shape varies from country to country. I offer you the classic donut shape and then the dove and a cute handbag. You know that I like drawing and so I made the shapes freehand but you can also use the ready-made ones, you can also download them from the web and print them. The scarcelle are decorated with hard-boiled eggs which are incorporated in different ways according to the shape. They can also be more than one but always in an odd number. The egg white and sugar glaze is optional, you can also leave it out.
    🕊 Ingredients
    500 g of type 00 flour
    Evo oil 85 g
    2 eggs
    Milk 50g
    Sugar 150g
    Ammonia for sweets 9 g
    Colored candies and sprinkles
    For the glaze: 1 egg white, 120 g of icing sugar, 3 grams of lemon juice
