It might be good to cook in the oven at 400°F if you want to get better Browning. Also, you can add butter when you are cooking in the pan on the stove top before putting it in the oven. Cordon bleu is a great classic. Thanks for showing us your version.

Want a restaurant trick? 😊 When you want to pound out the chicken for something like this, just put the chicken on your board and put the fat end to your left or right depending on which hand you want to use. Cut the chicken in 3-4 big chunks. Lay those chunks cut side down in your plastic and pound THAT out wide and flat. It will give you a better shape and a more even thinning. Sorry, used to work in restaurants as a kid and young adult. Cooked for a long time (which is why I like your Cast Iron Wednesdays so much) and got some tricks here and there. Give it a shot next time. Practice first. ;) It's how most Italian food places pound out the chicken for pollo alla parmigiana. This looks amazing, too. You can cook everything with cast iron!
I cooked in restaurants for 14 years .. but I never needed to pound chicken out flat before. I used the zip top bag trick because I saw Altron Brown doing it. He's one of my cooking heroes. Thank you for watching brother... I do appreciate the tip.
