when applying noise to "simulate" grain, put it in monochromatic and gaussian. The best way to emulate grain is actually with good overlays, and if you really want to be accurate use dehancer or find a way to luma key the grain. Grain appear more in the midtones, less in shadows and in the highlights it appears softly except for the really blown out areas where there is no grain at all
