To clarify, I’m calculating hydration using true percentages, not baker’s percentages. The dough is at a 31% hydration level if calculating using baker’s percentage.
more west meets easts! i'm malaysian too and i've been playing with fusion recipes too. love seeing more stuff like this! even the trials, even if they don't work out. i love the process
This was really interesting. I'd imagine the nuttiness of sesame would pair well with chocolate. I guess sesame oil is a different beast in such pairings :)
i'd be more curious about putting chocolate chip flavors in the yakgwa dough recipe. like seeing if you can get vanilla flavor in there (and then maybe less sake?). yes no sesame oil, yes to clarified butter. hardest part is the chocolate still. but somehow making it a layered/laminated chocolate chip cookie. combining the doughs, i don't think it's going to et you anything. because in the end, you're still baking it like a yakgwa.

Any chance we can get a video tour of your bookshelf? Maybe a top 10 essential food science books?

I really enjoyed this bake, but I don't miss the constant smell of sesame oil
Haha, me neither!

Thanks, Shreyas! Yes, I was surprised too. Sesame seeds pair with chocolate. Sesame oil and chocolate, not so much (IMO).
