hey thats a great question, there are different processes but innevitably they will be separated from the cherry/fruit part of the coffee cherry. When that happens they naturally fall into halves if they have developed to full size. Peaberry you do not see this; characterized by its tiny size, if you ever see a peaberry bean you will notice it is almost completely round like a ball (and will not appear to be split in half).
