One piece of advice: typically when doing coating meat or fish with flour and eggs, you want to have a wet hand and a dry hand. One hand for dipping in flour, and the other for dipping in eggs (either hand can be used for bread crumbs), so that way solid flour doesn’t form on your hands

Just in case anyone was unaware, this is basically just how you make a simple parmesan crusted chicken. You can add some greens like arugula and a light dressing like olive oil with lemon juice with salt and then just enjoy. Simple concept and hard to truly mess up as long as you have enough oil in the pan and its hot enough :) Usually the breading would be more than just panko for a better flavor. I would add freshly grated parmesan cheese, freshly ground black pepper, salt, cayenne pepper dust, and maybe something like dried oregano.
It's not burnt tho, the coating is a dark golden which makes it really crispy and delicious. Anytime I've made breaded fried chicken I was told to make sure it was golden

If you're every struggling to cook chicken, just remember 2 things 1. If you can see the strands of meat, the muscle fibers all the way through and the juice is clear when you cut it open at the fatest part thats cooked 2. Once you take it off the heat it will keep cooking so take it off let it cool then cut it open to check.
Whenever i prepare chicken schnitzel, or as charlie has so cleverly proclaimed, 'good chicken', i'll fry it on both sides for a nice crisp and finish it off in the oven. I saw that charlie went for the non-oven strat, which is quite a bold way of doing it
Chicken can be so annoying to cook to perfection, your method is really good. Maybe a little too crazy on using the electric power bill, a necessary sacrifice.
this looks like honest-to-god good chicken right there. I would recommend to try and use turkey cutlets (I think that's the word for it ? or maybe you also call them escalopes idk) for these pieces, it spares the need to flatten them evenly. you could also try to cook it with salty butter if you have it around (idk if you can have that in the us), it makes the pieces a little bit softer and overall adds taste imo.

If you're every struggling to cook chicken, just remember 2 things
1. If you can see the strands of meat, the muscle fibers all the way through and the juice is clear when you cut it open at the fatest part thats cooked
2. Once you take it off the heat it will keep cooking so take it off let it cool then cut it open to check.

this looks like honest-to-god good chicken right there. I would recommend to try and use turkey cutlets (I think that's the word for it ? or maybe you also call them escalopes idk) for these pieces, it spares the need to flatten them evenly. you could also try to cook it with salty butter if you have it around (idk if you can have that in the us), it makes the pieces a little bit softer and overall adds taste imo.
