*MONCHONG* (Pomfret) - JAMAICAN Brown Stew - Catch/Clean/Cook

- I have Vince and his family out looking for their first ever swordfish in February 2021. We caught a Monchong (pomfret) first drift, but unfortunately pulled the hooks on our swordfish later that day. Back at Bud n' Mary's Marina we fillet the fish and Vince takes the fillets with him we keep the carcass. Jamaican Mike says he can cook it, and after figuring what parts of the meat we could get off the carcass, Mike makes his delicious Jamaican Brown Stew! Enjoy!

Vernon, if the agitators of both races would be told to sit down, be quiet and listen for a moment, there would be a chance for true brotherhood. This is not a racist country but as long as the agitators have a voice then it will seem like it is. Red blooded Americans is what we all are. Fishing brings everyone together especially when we are catching and cooking and sharing.

I would never consider trying to to tell Mike how to cook, BUT the entire time I was hearing how BONEY the salvaged Pomfret pieces were I was thinking why not strip all the cooked fish meat off those HUGE rib and head bones and add the deboned meat to the roux to make a fish STEW!😊
