I used another Hooter's recipe that goes a step further, and uses unsalted butter, and Frank's Red Hot, along with sour cream, and white vinegar. After comparing that version with the real sauce (medium), it was pretty much spot-on. The only issue was separation, after it had been in the fridge a day, or so (I guess this is what all of those artificial ingredients in the real stuff are for lol).
Hats off to you sir, I went in a little skeptical but I think you hit the nail on the head, although the recipe on the bottle said balsamic vinegar I did throw a splash in there.

For 40 wings I would double up on the recipe and you should be just fine. If you are talk 40 whole wings meaning 80 pieces I would quadruple the recipe.

You boiled your butter before even adding the other ingredients. When making any butter-based sauce it's important to not break the butter, otherwise the resulting sauce will be runny and won't cling to the chicken, instead it will all drain to the bottom of the plate or bowl.
When you say "break the butter", is it better to blend all the other ingredients on the stove and then mix the butter in last? Cause I want to try this!
@@BrandonPenson What I do is very gently melt unsalted butter on a very low heat. Once the butter is completely melted I put it aside and heat one or more hot sauces together on a higher heat than the butter was heated, then I add the butter and the hot sauce(s) to a blender and blend them together. I put the blended butter and hot sauce in a low heated oven (150 F) to keep it warm until the chicken wings are fried and ready to be tossed in the butter sauce. When adding the butter and hot sauce(s) to the blender, you can add any additional seasonings and even a fresh garlic clove or two to add an extra garlic kick. Hope this helps.

You can try to using less butter to thicken the sauce or you can add a teaspoon of cornstarch and teaspoon of water if you want it thicker.

This is true. When I first had Hooter back in the day. The sauce was thicker. Now its a very thin layer. Still good but different.
