I’m glad you asked!! If you cut the tops completely off, I’ve noticed that the beet will bleed more, or lose a lot of the juice in them. Once you’ve boiled them, the skins will peel off and then you can cut the top off as you slice them for in your jars. Hope that helps!!

I typically gauge it to one pound of beets per jar. I hope that helps!!
