Welcome to Wills Mountain Homestead!! My name is Wendy and I live in South Central PA. I am a wife and mother of a beautiful daughter. I am a registered nurse but have been a stay-at-home mom for the past two years. During this time, I have taught myself how to garden and preserve the foods I have grown. I am hoping that I can share those skills with you along with teaching you how to cook from scratch. I hope my channel will provide you with the knowledge to feel comfortable canning and preserving. I will be bringing you informative videos on gardening, food preservation, cooking, and much more!! Finding Abundance Through Chaos
Chaos gardening can happen for many different reasons. I'm sharing with you what a garden looks like without any care for over 40 days. I was completely amazed with the amount of produce I harvested. I ended up getting enough peppers to make stuffed peppers 3 times, 8 pints of sweet peppers, 8 pints of cowboy candy, fermented hot sauce, and 3 quarts of dehydrated poblanos. Quite the harvest we had!!

Would you give the same suggestion for yams? I canned yams for the first time and the end product was cloudy
Do you know anything about processing chickens with bumblefoot? We just processed our own chickens and most of them have deep sores on their feet and we were wondering if we could still use the feet or if we should just throw them away...😔

What kind of chickens
These are Cornish cross chickens
If you trim off the top and root of the beets after cooking. The skin should slip off much easier.

How long in the water bath?
For now, I’m gonna do canning salsa last year. We made salsa but we didn’t have as many tomatoes this year. I’m not sure why we had record amount of rain here in Minneapolis. It was beautiful and everything is green, but my husband said it might’ve been a combination all the weeds we got last year from a drought. Yes, it was crazy. Was like living in the west we got the weirdest weeds. I’ve never seen in my life come through the previous year so we did that and then tomato plants. We’ve got our special breed of the master gardeners of Minnesota and their bigger than a cherry tomato and they’re like orange color. They make the best salsa, but they bloom, low lowAcidy. I’ll have to check into that variety of tomato. I’m always looking to try new types. Our weather was hot and very dry this summer. I’m probably going to have to get a few loads of cow manure from our neighbors to help amend our soil. I do have a video on my channel on making salsa. Thank you for watching my videos!!
I saw a dehydrator at a garage sale last week and I should’ve got it. I just thought oh it takes up so much space but then all this week I was thinking of things I could try to make with it. Groceries are getting expensive. I gotta start getting resourceful.
Dehydrators can be pricey, but well worth the investment. When our stores have sales, I will buy extras of bananas, strawberries, and other fruits and will dry them. Great for in oatmeal or just snacking. I also use it for a lot of garden veggies/herbs too. I’ve seen them listed in my area on facebook marketplace before pretty reasonably priced.

I first started growing these a few years ago. I had never heard of them either and purchased seeds from MIGardener. I always like to grow something different every year, and these have become a favorite!! Thank you for watching!!

Why was it bad without the sugar? I am trying to find a recipe without sugar.....
I was following the recipe from my Ball book. And, no sugar made it taste awful. It was very bitter. Even though it’s not a lot of sugar used, it makes a huge difference in the taste. You could try a lacto-fermentation with the zucchini. That way doesn’t require any sugar. Hope that helps!!

Is the 1/2 head space measured from the bottom on the threads or from the lip of the jar?
If you don’t have an all in one debubbling/ headspace measuring tool, you can gauge headspace based on the threads of the jar. One inch is at the bottom ring or neck of the jar, the next thread up would be 1/2 in and then the top one would be 1/4 in. There are really good diagrams of this on google images if you need a visual reference.
Why remove the cinnamon sticks?
The only reason I did was just to follow the recipe. I’ve canned other things like spiced peaches or red hot cinnamon apples where they are left in the jar. Hope that helps!!
Love Cowboy candy and the onions! I am wondering about halving the syrup in the cowboy candy as there is always so much left over.
That’s a great idea to just do 1/2 of the syrup especially if you are canning a small amount of peppers.
This method works GREAT for peaches substituting peach juice.
How long does the bbq sauce last once opened?
Great question!! I would say several weeks, however, I always check first for molding, and smell it to make sure it hasn’t turned before I use it.
@@willsmountainhomesteadI had another question. I just canned some bbq sauce, I see air bubbles on it. I made sure to take out as much as I can. Is it ok to have bubbles in them?
@@timetraveler6615 as long as the jar is sealed and you have the correct headspace, it should be ok.

What do you make with canned potatoes? I've never tried it but keep seeing it around and want to give them a try!
Great question!! I like to drain them and then fry them. Or, make potato salad or mashed potatoes. They are also good to make a potato soup with. I love the versatility!!
what’s the point of putting that much seasoning it’s not like it’s salt 😭
I use Italian seasoning on them. I don’t use that much on each tomato. However, if you rehydrate them in olive oil, the seasoning adds to the taste. It’s a personal preference. You can dehydrate them without it.

They are cute!! If you have outdoor space for a potted plant, I grew one last year in a pot and it vined up my metal porch post and did really good.

What kind of flowers do you have? This is my first year so I planted things WAY too close lol. But, I am starting to sketch out how I want next years. I’d LOVE to hear your good/bad
I plant a few different flowers. Marigolds are good to deter pests and attract pollinators. I also plant poppies and calendula. I started a medicinal herb garden this year, and borage produces beautiful flowers and so does marshmallow root. I have a tendency to plant some things too closed too..like cabbage. Having a planned layout does help. Hope you are having a good harvest this year!!
This is one of the best mint jelly recipes I have ever seen beautiful absolutely beautiful. And I like the fact you kept it natural without putting in the green food coloring..

Yes!! They break down and you can pull the spine out if you want to. I usually do. The little bones dissolve.

I don't have a dark place to store my jars, would it be ok to store in fridge after jars have cooled
I honestly don’t know the correct answer for that. I personally wouldn’t store them in the fridge. I would check Pinterest for creative ways to store your filled jars. I have a friend who purchased long totes, places her jars in those and stores them under her bed. I hope that helps. If I come across anything I’ll let you know.
Many years ago I met an elderly Romanian woman who used soaked tapioca to make her jam instead of boxed pectin. I tried it with mixed results, some so horrible they were tossed because I never had her "amounts". I recently have started using "Tapioca flour/starch" with much better results because I can add diluted amounts (water & starch) and cook it until I get my desired set-up result. I can also grind my own tapioca to make my own flour/starch.
I have never heard of using tapioca to make jam. That is definitely something I’m going to look into. Thank you for sharing!!
@@willsmountainhomestead You can use it to thicken your fruit pies too. Just make sure if your using whole pearled tapioca that you soak it well first. My last batch of raspberry jam I did half whole and half flour/starch.

I do!! If you look through my videos you will see one called zucchini “apple pie” filling. It was from last summer. We love that recipe. You really can’t tell that it’s zucchini.
Sounds good until the eggs start hatching that you don't see under all the leafs. When you get the larva's in the stems you might as well kiss the plant goodbye. I'm happy for you that you can sit in your garden and wait for the bugs to come to suck them up. I wish I had the time to do that. Good luck. Green ways always turn into spray ways when people wake up and see the light.
I do check the underside of the leaves daily for eggs. I have found that packing tape works best to remove the eggs without damaging the leaves.
Do I have to use the peppercorns and garlic?
Those can be omitted if you dislike them or do not have them on hand. It may alter the taste of the final product.
