How to Process Quail Whole: Detailed Guide for Beginners

  • Finally posting something on this here TH-cam Channel of mine! [cringe] If you’re watching this video, please know it’s my very first one and my editing skills were definitely lacking (I recorded two angles but only figured out how to work on one… oh well). Grace is appreciated!
    Because of the encouraging community and so many requests to have a reference video after a very successful hands-on quail butcher workshop at Quail Con 2022, I am sharing my process of butchering quail whole which is my preference for aesthetics and/or final product presentation.

    I have been contemplating raising quail in a urban area but was wondering if I coudl process their WONDERFUL meat. You have given me confidence and a mental/spirit related way to say THANK you to the bird for its sacrifice to provide sustenance for me. THank you!

    I processed my first birds in early March. I hadn't seen your video, but I'm impressed with how you demonstrated your method. Very good for a first video. It's been 7 months and I don't see any more, but I hope there will be more.

    I used my Cutco Shears to perfectly trim an insulated steel door to install a doggie door! THey are great to have in the tool box or kitchen! THANK you for this tutorial on Quail- I am nearing a decision to become a quail raiser.

    Thank you for this. My husband usually does this with out birds, but trying to get him to show me exactly how with his monster hands is tricky. You make it look as easy as i thought it would be. I’ll be the one getting the birds ready here at home

    Great first video! I love the look of a whole bird on a plate, too. This is the best video I've seen for cleaning a bird. Great info on the male and female parts and how to deal with those. I subbed to your channel. I have my first batch of quail hatching now. 13 in the incubator with 23 more eggs to go. I'll be watching your video again in 7 weeks, when it's time to get my male/female ratios correct. Thank-you and good luck with your channel!!

    Great video. Thanks to the team at quail con I processed my two extra roos. Went great, the shepherd loved the organ treats, the hound gave me a "look" until he saw his sister eating them, then it was OK. It was very helpful seeing the difference between the roo and hen organs. Now I know for sure what the white things were. Thanks Jasmine, looking forward to more videos.

    Great video. I don't have any quail, but I do have turkeys and plan on getting chickens. I haven't processed any of my turkeys yet because they aren't old enough, but I plan on having one next Thanksgiving.
    You made this look very easy (aside from any emotional issues/attachment that could arise).
    I'm tempted to get quail, my cousin raises them in NC and my daughter loves birds. I'm just a little bit worried they will reproduce too quickly.

    Thank you for showing us..... not looking forward to processing my own meat but know it's a must to put food on the table and helping other family members and friends who are in need of help. Hope you can share recipes on quail meat and eggs. What kind of quails do you raise? What kind of quail did you process? Was that a jumbo? Can you show us the difference between a standard size and jumbo size? Which one you prefer and why?

    Hi Jasmine, This Gary,met you at the Quailcon this last Sept.Dispatched some Quail and talked to you a couple times.I remember you told me how to find you(Tyme and Timber)noticed you a few weeks ago with your first video, congrats. Remember we live in Buffalo Mo.,so not to far.Im still interested in new blood line not related to Myshire Farm.I believe Genetics are crucial and would like to purchase some of your largest Male jumbo Quail to boost my genetics,making a stronger bird.Thanks,Gary

    Thank you for this wonderful tutorial. I can’t wait to learn more from you. I’m getting my first quail hopefully this spring. The closer that gets the more nervous I get. One thing I’m most curious about is how long eggs will keep outside of the fridge for eating not incubating. That is a goal but first things first. I’ve watched all kinds of videos and this topic seems harder to find. Thanks in advance

      You’d be surprised, my husband can do this method without any issues. He has huge carpenter hands… much bigger than yours. But I totally understand the ease of the spatchcock method too.

    Me: trying to adjust the lighting. When you put the bird up next to but out of shot, me trying scroll and zoom. Can i just suggest using overhead lighting or close the curtain behind you. Can’t really see what your doing.

    Perhaps you could redo this with somebody operating the camera so that we can actually see what you're doing in close ups when required. Particularly as you went off screen a few times when you thought that you were showing us something? Thank you.

    Can the feathers and entrails be composted? Or are they not so predators aren’t attracted?

      They absolutely can be composted. Add them to an active compost pile and bury deep to avoid attracting scavengers. Or if you have an active black soldier fly colony (larvae), they can clear those out in a matter of days.
