Thanks for the video!! Great info !! I used to follow 3-2-1 Method religiously, bit now Im more closer to your 2-2-1 method. I go by the meat temp, cook to 165, then wrap until 200, sauce and 30 to 45 mins to glaze. Thanks!

I think my favorite method is still the 275º (which I have an updated video shot and almost edited) but TBH the 2-2-1 method is one I have been leaning into often lately. Friends and I are doing our annual rib cookoff in two weeks, and I am torn on which one to use!!! As to the wood block, it is the American Flag RWB XL End Grain from RoseWood Block & Co. I love the board, took a while to get it since it was a custom make, but worth it! I don't see the RWB, but here is the closest option on the site currently | rosewoodblock.com/product/stock-american-flag-bw-xl-end-grain/

Been using charcoal grills since I was 7, now after breaking it in on the 4th of July, I feel like I just upped my game. Oh and I noticed the flat top in the background. That’s my next purchase heh. Yet, I’m a smoker newbie and you taught this old dog some new tricks. I’m responding from my cooking channels account, I just couldn’t keep it going though, my age catching up to this old veteran. Spending so much time running out to the VA made it hard to finish videos. So I had to put it on hiatus for now. I’ll check out the shop and try out some of your rubs. Sounds like a fun time!!! I was all charcoal, on big offsets and reverse flows until I had kids. That's when the pellet grills came in for me, maybe 10+ years now it has been my main cooker. Not as many videos on the Traeger Flatrock griddle yet, but there may be some more coming 😉 And yes, we do have a Veteran's/Military discount. Use "VET10" at checkout, and thank you for your service!

Did you use any binder before seasoning?

So 221 means 2 hours bone side down then 2 hours meat side down wrapped in foil. Then 1 hour with meat side down and sawced
Do you keep the super smoke function on throughout or just the first 2 hours ?
Great question, just the first 2 hours. After I wrap, no need for super smoker anymore.
