    Thank you Captain Vince. What you are showing is a lost art. I used to buy filleted shad at the Reading Terminal Market in Philadelphia from the fish mongers there, who were aces at deboning shad. For those who have never eaten shad fillet, it is gourmet delicious.

    I came here from the 1996 movie, "Caught." A fishmonger sells shad and promises his customers their money back plus a quarter of they find a bone! One of my favorite movies from the 90s. Great video!

    Shad deboning was excellent, I'm waiting on captain vince to debone the buffalo fish. You are the man. Nobody cleans like you.

    The founding fathers of our nation ate a lot of shad. There's a book called The Founding Fish, by John McPhee all about how important shad were to the American colonies. The eggs are delicious. I've never had the meat though I'd like to try it.

      The meat is superb, not unlike a particularly fatty and flavorful salmon.

    Hi again Captain! I was the same way as all those others, a Shad could not be cleaned into fillets that was worth anything, I never caught a Shad but this reason I never went after it, very impressive! Another thing on the salmon, there are videos out there that they use an electric knife, cut behind the head, turn the knife and whisk down the backbone in 2 seconds and flip it and rip the skin off, so much meat left as waste, I didn't think backbones were that flat..LOL.

    Drying and smoking shad was a huge industry in colonial times. George Washington for instance had his entire family along with paid paid workers and hundreds of slaves catching and processing shad for a couple of weeks every year. It was a big part of his estate's income.

    is it Shad & Bunker are the same i didn't know people eating it , the bait shop charged me $2 for 1 i use it for Crabbing .

    My salute to a real Master and to that noble fish, the White American Shad, the fish that is fit for Kings and the King of fishes and to its high class roe, thank you Captain.

      shad ...the fish that is fit for kings ....WTF ....nop nope nope ...have to disagree with that statement ...they stink the second you pull them from the water ....i couldnt imagine eating 1 outside of a starvation /survival type situation

      +meluhawasi ......yes they are farmed in terrible conditions. ...I don't buy any frozen fish. ..I am fortunate to live on a farm and I have a 3 acre lake that I stocked myself with large mouth bass. .channel catfish. .and 4- 5 kinds of blue gill and sun perch....check out my instgram ...dlb71 and you can see pics of the fish .

      +meluhawasi also the shad I am speaking of are local shad called gizzard shad ...they live in fresh water and are a foul fish

    Henry Gouardine, (Hudson River commercial fisherman & carpenter) would be gone so fast when the shad were running that his hammer would be left hanging in mid-air. (from his obit in NY times)

      yes...thats what we use for bait here in texas ....its great for bass,catfish and striped bass ....i couldnt imagine eating 1 ...they smell digusting as soon as you pick them up out of the water and they are ULTRA slimey ...when i heard of people eating them i was disgusted and can only hope that the american shad is much differnt than our gizzard shad

    As the French say, ca ne vaut pas la peine.
    Cut the fish in thick steaks. Lightly season and bread. Prepare a baking pan with a coarse chopped mirepoix. Lay the steaks on top, add water about half way up. A little pepper and paprika, and cook in a slow oven for about an hour until the steaks have a pretty crust. You can cover the fish lightly at the start. Prepare the roe separately with bacon and flambé at the end. If you are not prepared to eat carefully you don’t deserve this sublime fish. Only sissies eat this filleted.
