Variety is the spice of life, and music, to me, is life! After 50+ years with the guitar, from bluegrass to James Taylor to blues and more, I still find it a pleasing challenge to grab a simple progression and see how I can make it say what I want. I do love most of these tracks!

My response to Geoff Kennard's post was meant to make a point that when one reaches a point where some music seems easy it can be a challenge to use that platform to expand one's creativity by doing more with that simple arrangement. This is, of course, relative to each individual's level of technical skill and experience. For someone just starting out most things are difficult. To a seasoned guitarist, this track is a beautiful accompaniment over which to have fun, chill out, experiment with modes, or whatever floats your boat. The "challenge" in this is finding new ways to express yourself with new phrasings or other nuanced techniques, expanding your musical vocabulary and creative palette. I am so happy to have these tracks. Every time I start one I get a different vibe. Hard to explain, but my favorite place to be. Play what you love, and as you progress it will amaze you when seemingly impossible things become as easy as speaking your native language. Sorry for the ramble. Play on!

This isn't a modal variation actually. The 3rd of the E chord (G#) is what's bothering you here. It's natural 7th, giving you the harmonic minor (ABCDEFG#A) sound that we associate with Latin music. You can get away with Aeolian and Pentatonic minor scales here as long as you're guided by your ear and avoid leaning too heavily on the G# on chord V (E). Favouring G# over G over that E chord will give some cool sounding results though :)

when on the e chord, try going from the e note half step down and half up (e eb e f and so) like in tango

I'm not an expert but I'd say it's because neither Dm nor E7 are in A dorian, making its notes not sound very well
