So watching these oil is normal thing for us as we are used to it. We focus on fulfilling stomach, not on making healthy food cycles. And on top of that, you can't afford to feed needy people for such low price by using expensive base such as butter etc. I hope this clears everyone's doubt here.

It will actually be loss for him because then he would have to put more masala/bhaji which will not be very feasible for him since he is selling it for 10 Rs. hence he puts so much oil to save masala..
I came to know that after suffering from hypertension ( I used to love every street food). To neutralise it ( min 500 calories) one has to walk for 3 hours at 6kmph, or may be jog at 10 . A ciploxtz will be required complimentarily. Once in a while is okay ,maybe once in 10 days

A couple points for people and the oil consumption. This isn't a complete pav bhaji. It's modified due to lower costs, thus tomatoes and all the veggies cost extra. The oil used in the dish gives extra energy to get through the day. The workers are not rich, and they work very hard. Most need all the energy they can get. Since their is no meat consumed, they get their energy from oil and butter. Keep in mind this is .13 US cents. 13 cents, for this total. This is why he cannot use tomatoes, potatoes, and peas in the bhaji. There may seem like a copious amount of oil, but this isn't bacon grease, it's a more healthy type of oil. Keep this in mind as you watch the video.
Looks like Maharashtrian Misal Pav with that tasty oil or your typical dal tadka😋😋 Also people complaining about oil never had some dish with tadka? Look at how he is serving. All the oil float above. He is scooping the dal/bhaji from bottom and adding a little bit of oil on top as tadka/tarri.
people complaining about him not using ghee & butter (or even that fancy high class oil) should understand that it's for 10₹ per plate & for the price he had done a great job without mixing anything unnecessary (except for the amount of oil, maybe he could have reduced it a little) . You have to understand that he is not selling it in a porsh area! (just look at his surroundings for second before you make those complaints)
Yes it is spicy. We call it pav bhaji . Basically its a mixture of all vegetables and fried with butter or oil and serve with 🍞 or 🍔. Its like veritable curry with spices
