I use a small sheet of heavy plastic the size of the bucket opening to block air from my Bokashi scraps. The white mold grows very quickly and I never have had any contamination from other molds or bacteria. It also solved a problem with flies laying eggs in the buckets. Great idea for use of the grate. I only have two buckets and could use double that number. Thanks.
I use either Wheat Bran or Rice Bran, which can be found in bulk at the local farm store or feed store. If just looking for a small quantity you can find it in the baking isle of the grocery store such as "Bob's Red Mill Wheat Bran".
