      Similar to the one I've made (and love)! I think the only differences were: vinegar instead of citrus, no fish sauce, water instead of coconut milk. Must try that variation soon! 😋

    When I tasted this, I realized it would make a pretty good peanut noodle sauce. So I added about %50 more coconut milk and lime juice, some sambal chili paste, did my basic veggie stir fry with mushrooms, onions, and peppers, with fish sauce and rice vinegar, and fresh ginger and garlic. Added the sauce to it, and some rice vermicelli. Finished with about 1/4 chopped cilantro, and some extra siracha. Very awesome. You're the man Chef John!

      Kreisball try almond butter (which is sweet), or "wow" butter, which is toasted soy bean butter here in Canada.

    All-natural peanut butter is absolutely key. I tried multiple times with name brand peanut butter with all the emulsifiers like he mentioned and it just never ended up tasting right no matter how much I tried. So much better with natural peanut butter.

      I know exactly what you mean, DPMixing! I made his Peanut Curry a few months ago and used regular peanut butter. It just didn't taste right, so a few weeks later, I tried it again using the all-natural and BINGO ... it was sublime.

      @@PockASqueeno most grocery stores carry it. Just look at the ingredient list. It should only say “peanuts, salt”. Some are only peanuts, in which case you would have to add a little salt to this recipe.

    The first time I went to a Thai restaurant, they served this up with the starter, I didn't know what it was but as soon as I tried it I was hooked 😍 so glad to see it's a simple recipe I can make at home 🙌

    I made this sauce with natural peanut butter. I ate it with spring rolls. It was so, so good. I did add lots more sugar and chili sauce and I did the old shake, shake with cayenne. I love this sauce.

    If you don't have the "fancy hippy peanut butter" you can always just throw some real peanuts, almonds, cashews, or a combination of them into a food processor and run in on high. After 2 minutes you will have your own additive free nut butter.
    It is WAY cheaper than buying it (especially almond butter).

    Just tried this recipe for dinner with fresh spring rolls. It was so good! My family loved it! Though I didn't have coconut milk, so I substituted it with regular milk instead, still turned out great. Thanks!

    I'm going to try your version next time I make peanut sauce! I usually use "chunky" because I like the extra crunch. I'm addicted to spring rolls and this might just push me into rehab if I'm not careful!

    Basic peanut sauce for satay (sambel kacang): roasted peanuts grinded, add palm sugar, add grinded chilly and garlic, salt and peper; add sweet soy sauce. add water a bit to let it reach the desired consistency. add desired spices(family vary)
    Is chef john recipe authentic? no.
    Is chef john recipe taste good? yes.
    To be honest mate, adjust and resize as you see fit, becoz all you want in the end is delicious meal (by your/and your peer standards, not by authentic standards). The bottomline is HAVE FUN WITH YOUR MEAL

    Unfortunately, fish don't work like that. Sorry. They move all around all of the oceans throughout their various life stages. For most species, nobody has any idea where the young go. Many are so tiny and so difficult to find that it is a complete mystery. Fish don't just live in one spot, even species that are only 'found' in one location spend many parts of their life cycle in other places.

    this may be slightly out of place but... small suggestion: how about making fudge for a episode? I mean, we all remember standing outside the fudge shop on a cold winter day (or moderate spring day in my case) looking at the guy making chocolate fudge through the glass. little tip: add the chocolate after it's cooled down a bit to get more chocolate flavour. cooking chocolate too much takes flavour from it. and be careful boiling sugar. (you don't want to burn your hand!) hope you like the idea.

    Way too much brown sugar. It does not need any added sugar at all. Even all natural peanut butter has a sweetness to it, and so does coconut milk.

    just use either soy sauce or even salt. you don't have to use coconut milk, you can use warm water (which is more traditional).

    It works great as a marinade, mostly its used as a marinade for tofu. You can sub coconut milk with regular milk, or water. But coconut milk is delicious, you should give it a try.

    o_o this is exactly how i make my peanut sauce. except i add more thai chili peppers, cilantro, and spring onions. and i use hot water instead of coconut milk. but i might try the coconut milk now :)

    A huge mass of water is a fairly good radiation stopper. Sea is one of the greatest source of natural radiation (as is soil and rock and basically everything, to its own degree). So my degree in physics tells me you get irradiated every day of your life, by everything you come in contact with, including your sister, your wife, your mother and your daughter. Oh and yourself! Anyway, feel free to prefer avoiding fish from the sea in a radius of 1000 miles from the fukushima accident in 10 years :)

I add it right at the end to preserve the flavour. apart from that... it was a passable fudge. (I might be kind of a fudge critic-guy-dude, so it's a lot from me) anyway, the recipe looked nice so... I guess I was wrong. good work chef! and shma.

    If your really want to leave out fish sauce you can just use more soy sauce or even just salt but it's not gonna be the same. Fish sauce has a unique flavor that can't really be substituted. And using milk would work but leaving out the coconut milk and fish sauce would change the recipe enough that it's not really the same thing.

    I mixed this with some ramon noodles and it was delicious. Thn I realized I totally forgot the lime juice......and I had a bunch of limes. Oh well..next time !

    Substitutes for peanut butter: any nut butter could work. Cashew, almond, sunflower. Make your own in a VitaMix type machine.
    One question, chef John, why not just nuke the milk?
    I need a freakishly small spoon so i can be famous, too. Some people have all the luck.

    there is vegetarian 'fish' sauce and recipes to make it too. you use seaweed like nori, kombu etc. instead of the fish. there are recipes here and if you google it.
    when did you purchase the fish sauce because the stuff was probably aged and likely the fish were caught before the earthquake?

    ½ cup roasted peanuts
    2 cups of coconut milk.
    coconut palm sugar 3 tbsp.
    3 tablespoons tamarind water.
    Salt 1 tsp.
    2 tablespoons vegetable oil.

    it won't taste exactly the same but you could substitute the peanuts/peanut butter with sunflower butter if you're friend is not allergic to it... if your friend is not allergic to tree nuts you could use almond or cashew butter.

    I don't know if anyone has answered you yet but a good alternative to fish sauce is miso paste. It's salty and savory like fish sauce. It is also vegan, if your're into that kind of thing.

    peanut sauce is great for veggies too! blanched bean sprout and spinach is the best pair! don't forget your fresh cut cucumber. And you'll have an easy PECEL, an Indonesian humble food.

    Probably that he used a peanut butter that had no added ingredients so it was runnier plus the coconut milk make it runny, If you use peanut butter that is thicker it would be not so runny

    if you're not allergic to one of the following sub with that: sunflower seed butter, almond or cashew... or you could make nut butter out of any nut that you're not sensitive to.

    Hi! I'm not Chef John, but my wife is Vietnamese. Fish sauce does NOT go bad, and does NOT need to be refrigerated. We use so much that it doesn't stay around long enough to be a concern. Just think of it like ketchup or pickled ANYTHING. It doesn't go bad because of the salt and vinegar content. Worry more about the white bread in your cupboard.

      Thanks for the info. I just bought a small jar of fish sauce and found I had an unopened fish sauce in my cupboard. It was close to being expired. Good to know it won't go bad, but I do keep it in the fridge...

    just grind up fresh roasted salted peanuts and you have it right there... liquidy and velvety.. and don't refrigerate... that kills the texture.. enjoy.

    Looks like a good spread for fresh baked sour dough bread. And maybe drizzle some on a Peanut butter and Jelly sammich. Or on some bananas.

    I don't think you would be able to taste the coconut. Considering the amount of different spices and other more strong ingredients in the recipe.

    Is it just me or is the sauce WAY to runny? The peanut sauce I've eaten has always been thicker and there were actual peanuts in it.

    That's coconut water. Coconut milk is the liquid that comes out when they squeeze shredded coconut meat.
