You’re right Saadat bhai it does look like butter chicken. I saw my mother frying spices after onion is fried & removed from the pot( to grind with Yogurt separately) thereby taking care of strong smell of haldi. But you’re right everyone love their mothers cooking due to her love they received in childhood. Your Aloo Gosht took me back to the memory of my growing up days in India. My late mother was from Lucknow and father was from Hyderabad Deccan. We grew up devouring the awadhi and Hyderabadi cuisine. Aloo and arvi gosht along with arhar daal, ultey tawwe wali chapatis and chawal, timatar, piyaz, and sirka wala kachumar used to be our favorites. We also use to eat one boty, two aloo and shorba, similar as you. Miss these kinds of food here. Your video reminded me of old days. Your cooking style is also similar to our home. I agree keep it simple, lal mirch, haldi, daniya powder, lassan. Thats all I use and get great results. When I feel fancy I use ginger and little bit of garam masala.

Ammi was the master chef and I don't say this lightly or even with a bias (trust me). I never saw her cook, but her skill sort of spoke to us as we grew up and scattered to different corners of the World. My Ammi never used Tomato's for cooking it was all yogurt based except of course in vegetables. I have recipes that I have never seen in any house I visited and are mostly creative using the (kinda) the same wine to deliver a different taste. She was very creative. A quick suggestion if I may. Never add potato's until the meat is nearly 75% tender. Potato's get tender rather quickly. You never want to se Aloo/gosht with the potato edges broken or perforated. But, then to each his/her own. Thanks and it’s true every AMA has the best skill set and taste and we could never replicate that and that’s makes her the best Ma! Regarding potatoes part it all depends on the potatoes in US we would add right after the meat is almost tender but in Pakistan we add way before as it takes longer here due ti the type of potatoes.
My Ammi was from Delhi, she never used tomatoes in any mutton dish, she uses dahi. I can't understand why everyone is adding tomatoes. Another thing I remember Ammi telling us not to add haldi in Alu gosht nor in any qorma, koftay saalan.
I always make alo ghosht . my kids like too much .but i always alo and ghosht put together .it never broken .and always use tomatoes paste with out skin . Within 15 mits its ready in pressure cooker and half an hour in daeghchi .colour and taste is very fantastic delicious .with the grace of alah I can all things make very quickly and neatly .my all friends and relatives like too much .in our family always use bakra ka ghosht
Azra, to be perfectly honest UP was the kitchen where most of the dishes were researched, redone and perfected. We even borrowed from the Iranians and some Turk influence as well that UP took and catered and adapted to the local taste. As an example Ammi made this version of Tahiree called Laal tahiree. OMG its stuff to die for. But, yes real gosht cooking has to be dahee based. Enjoy! @@Azra-Maqbul

Ammi was the master chef and I don't say this lightly or even with a bias (trust me). I never saw her cook, but her skill sort of spoke to us as we grew up and scattered to different corners of the World. My Ammi never used Tomato's for cooking it was all yogurt based except of course in vegetables. I have recipes that I have never seen in any house I visited and are mostly creative using the (kinda) the same wine to deliver a different taste. She was very creative. A quick suggestion if I may. Never add potato's until the meat is nearly 75% tender. Potato's get tender rather quickly. You never want to se Aloo/gosht with the potato edges broken or perforated. But, then to each his/her own. Thanks and it’s true every AMA has the best skill set and taste and we could never replicate that and that’s makes her the best Ma! Regarding potatoes part it all depends on the potatoes in US we would add right after the meat is almost tender but in Pakistan we add way before as it takes longer here due ti the type of potatoes.
My Ammi was from Delhi, she never used tomatoes in any mutton dish, she uses dahi. I can't understand why everyone is adding tomatoes. Another thing I remember Ammi telling us not to add haldi in Alu gosht nor in any qorma, koftay saalan.
I always make alo ghosht . my kids like too much .but i always alo and ghosht put together .it never broken .and always use tomatoes paste with out skin . Within 15 mits its ready in pressure cooker and half an hour in daeghchi .colour and taste is very fantastic delicious .with the grace of alah I can all things make very quickly and neatly .my all friends and relatives like too much .in our family always use bakra ka ghosht
Azra, to be perfectly honest UP was the kitchen where most of the dishes were researched, redone and perfected. We even borrowed from the Iranians and some Turk influence as well that UP took and catered and adapted to the local taste. As an example Ammi made this version of Tahiree called Laal tahiree. OMG its stuff to die for. But, yes real gosht cooking has to be dahee based. Enjoy! @@Azra-Maqbul
