With the ALL function DAX allows to remove filters from other dimensionsbr
I need to do this for multiple categories like yearly, Quarter etc. do I have to make new table for each?
You could try field parameters. Maybe that could work as well.

I could think of a second table column with subcats next to categories to have the "relationship in the modelbr
i have category with v and z sorting does not work what to do?
Power BI requires sorting tables so you need a column with numbers which you can use to sort the category columnbr

This will not work without a relationship the measure doesn't know how Category that has been created connects to the data and you will get total all the way down
