I own a 000-40M with a Moonspruce top. It is a sublime guitar with plenty of depth and warmth. I play mostly fingerstyle, but that guitar was made to be played with a pick. It strums like a dread and has plenty of volume.
I own a 1996 om-10 Deluxe with Sitka top and quilt Maple back/sides, as well as an om-09 with bearclaw top and Mahogany back/sides. The maple guitar is louder and more punchy with more pronounced upper mids and big bass. It's a fantastic lead instrument and cuts through a live mix like nobody's business. Both have excellent volume and tonal balance from string to string. I tend to layer them for rhythm on recordings and together they produce a huge sound that's super balanced.

My ears have yet to hear anything sweeter than Sitka and mahogany. That 000 sounds sooo good! The Larrivee 44’s are my perfect guitars.

As expected. Mahogany has a warmer overall tonality. Maple is nice too more of a crispness to it.
More bass with the mahogany - but that is a wonderful sounding maple guitar!
