I have been wanting to make lentil veggie burgers. I like a burger with actual vegetables. Do i have to simmer the patties if i add vital wheat gluten?
Question.. Do I have to simmer the seitan before air frying? Can I not just cook it in the air fryer directly, or will it not be cooked all the way through if I do that?

The simmering thing is so true, one time I accidentally boiled my seitan and it turned out awful

Yes, you can freeze the dough as well as the simmered and the air fried seitan!

I'm afraid the seitan would turn out super dry, that's why people simmer or steam it first
