I think corn is the greatest gift ancient mexicans gave to the world.. so many productos derives from it not only food. Also tomatoes, chocolate, vanilla, turkeys, the cotton used in like 90% of the world, avocado, chiles etc, were domesticated in ancient México
if you are still in chihuahua while reading this comment you should try going to a town called Villa Ahumada in chihuahua . My family go to Durango every December to visit family for the holidays and we always stop there to eat their quesadillas, burritos & the cheese which they are known for. They have a main street that’s maybe a mile or 2 long and they have small pitt stops & stores where they sell delicious quesadillas & their burros filled with friijoles, papas con chile rojo, de chile rellenos & rajas con queso.
Anything made with Masa is made from what is known as "Dent Corn" or cattle corn, not sweet corn. Chihuahua in certain areas has great beef because the cows get part of their diet from the locally grown corn. Sun dried Beef Machaca (Cecina) is a specialty of the area, Chihuahua used to be the main cattle region in Mexico and is where all the cattle drives originated from. Mexican and American cowboys would drive the cattle north as far away as Montana.
A good book to read if you like history, and is related to Mexico, is "Two Years Before the Mast" By Richard Henry Dana Jr. The author was a young man from the east coast who signed up as a deckhand on a commercial sailing ship from Boston and sails to California to an area of Mexico now called Dana Point in Orange County which was still part of Spain and then back to Boston. It was a two-year journey back in those days.
There were Mexican cowboys (Vaqueros) all over the Southwest and California in the 1500's, over 200 years before the USA even became a nation. Chihuahua used to be much more fertile until fairly recently where there has been much drought. Venezuela also has a long history of cattle and cowboys, and a whole genre of music connected to them, very nice music.
