I appreciate amritsari food and really love but since I am from south we don't consume so much ghee in our daily food habits. I believe it will definitely take toll on one's health if not consumed systematically. I have seen North Indians consuming 5ltrs of ghee in a month where as we don't even consume this much in full year. Different states have different eating habits and amristar is known for rich and luxury foods through out the year
Conclusion is very simple North Indians can't survive in south state and south can't in North because of drastic change in food habits.
