Lamb/Mutton curry was originally prepared putting all the ingredients together in a earthen pot and slow cooking the whole curry by wood fire on a clay oven. Today it is cooked using pressure cookers and slow cookers after briefly sautéing all the ingredients and spices in a big wok. curry leave x1 sprig

cardamom pod x6 no
star anise x2 no
cinnamon stick x1 no
red onion x200 go
ginger x15 gm
garlic x15 gm
“meat” curry powder x4 tbsp
tomato x200 gm
pandan leave x2 no
coconut milk x400 ml
potato x250 gm
okras x120 gm
mint leaves x60 gm
cashew nuts x100 gm
chillies x60 gm
salt to taste
Note: *could substitute lamb shank with different cuts of lamb to suit your preferences.
