Very timely comment, go check out Kirk Meredith's cover of Fight to Be Free, it's excellent and if you slow it down and look at hand positioning, you can probably learn how to play it this way!
Hey man, so in some instances I will try to separate tracks, although when I do I use moises.ai and not demucs. But the vast majority of the time I actually slow down the song to the desired speed and try to watch as much live footage as I can to get hand positioning and catch all the details that are not evident from just listening to the song. That's kinda my process: 1) listen to the song, 2) slow the song down if you need to (for solos especially), 3) watch as much love footage as possible to corroborate your drafted tab 4) if some parts are still hard to transcribe, then splitting tracks can be an option! Hope that helps man!
